it's curious how an American cereal conquered a place in the cuisine of so many countries around the world! In most of Latin America there's hundreds of corn varieties all along the Andes mountains. in Argentina we don't have so many variants, mainly a couple of white corn, and yellow corn like the one you used. I remember the yellow sweet corn started to appear around 20-30 years ago, it was striking how sweet it was compared to the more traditional types.

Yes, it’s really curious! And the origin of corn is Latin America! In the future, I’d like to visit and try some corn varieties! Really? I thought there’re many varieties of corn in Argentina too. Yellow types are reactively new in your country. Yes, I like this sweet corn:) Thank you!

Ohayo gozaimasu Ryusei! The harvest of sweet corn is beginning where I live so your video upload of sweet corn recipes is timed perfectly! I like to cook the whole unpeeled ears of sweet corn on an outdoor grill used to smoke meat. It gives the sweet corn a light smokey flavor and cooks it very tender by using the moisture in the corn silk to steam the corn kernels. I will cook the corn and rice recipe this weekend and let you know how it is. Thank you once again for teaching us new ways to cook familiar ingredients! Arigato! :)

I love edamame! Although I doubt I've ever eaten it fresh, but even so I order it when I get sushi regularly and I've bought it frozen before. I prefer it with a lot of salt on the pods which may not be as healthy but it's tasty 😋

Edamame 🫛 has only appeared here a few years ago - as a popular snack in sushi places, steamed and salted. Now, that Poké bowls are so popular here, one can find them in any good supermarket- frozen or steamed in a sealed bag. Great idea to show us more about it and introduce some more variations. Thank you ❣️

Konnichiwa Ryusei! Edamame is a favorite appetizer to begin a meal when my girlfriend and I go to eat at a Japanese restaurant. We love it very much! The Edamame no chawanmushi recipe looks beautiful and very delicious! This is another recipe that I need to try making. Once again thank you for teaching it. I appreciate you very much! Arigato! :)

Thank you so much for the clear and detailed explaination. Its is harder to obtain Usukuchi. You either have to go to a Japanese speciality store or order online and they also cost more compared to Koikuchi.We usually buy a good brand of soy sauce that's a cross between the two .We try not to use cheap brand of soy sauce as it makes all the difference in the taste of the dishes.

I really loved this video! I remember wishing you'd explain more about the different shoyu's in a previous video so this was so awesome and interesting. And your calligraphy is just stunning. Thank you for such an informative video! I'm a little sad because I have to eat Gluten-free and there isn't a lot of variety in Gluten-free shoyu, but even so I like learning about stuff like this 😁

Are any of these shoyu considered light or reduced sodium? With health high salt can be problem.

No, they are not light or reduced sodium. But, I'm sure these traditional soy sauce has Umami so much, so we can reduce the amount of soy sauce when we use or season something. Thank you.

Thoroughly enjoyed. My Japanese grandfather as a young man came to U.S. shortly after 1900. Although his children, including my Dad did not speak Japanese, my Dad always said shoyu, not soy sauce. That pronunciation obviously came from his father. Appreciate your work!

Myoga is v difficult to find for me. Is there a substitute or can I omit it? I wld like to try both recipes! The heat has been unbearable, so cold noodles sounds fantastic

sadly, somen is not very popular here, but i learned to use chopsticks about 20 years ago, and I use them quite often, even to scramble eggs or cooking ^_^

The interesting thing about teriyaki is that it's not authentic Japanese food. It's a recipe invented by Japanese immigrants in Hawaii.
