Beat a couple of eggs in a bowl Dice up some onions and chop a few scallions Mince some garlic and dice a carrot Make sure your rice is cold Scramble the eggs, break them up into small pieces, and set aside Add a bit more oil if needed and sauté the onions Throw in the garlic and carrots, and stir-fry them until they’re tender Add the rice to the pan, breaking up any clumps (Mix in the chicken) eggs, and the scallions season it well (oyster sauce is a must) Stir-fry everything until it’s all well combined
