Hey I see you turning your knee over like youre doing a roundhouse kick we dont learn it that way and we dont pivot on our foot when doing knee at our gym. Which is correct my gym might just sucks. Thank you

This is just another type of knee. There's a straight knee, where if you look down while striking, you won't be able to see your calf because it is tucked underneath, and there's the long knee, where you will see your calf outside of your leg when you land. There's also a video of a female Muay Boran fighter who teaches the difference. Her name is Kru Pol, she's great. She also does break downs of Muay Thai traditions like Wai Kru and such.

Thrust forward from your hip. Your upper body should lean back slightly, to counter balance. It's similar to throwing a roundhouse, just don't extend your calf, keep it bent. If I was you, I would just practice the technique slowly while practicing to maintain balance. Balance, when throwing knees or kicks, is key.
