I used your idea and made the rice balls with the bowl technique for my husband's lunch. I think I did a good job! I hope they taste delicious. I did a spicy Salmon mixture inside. I'm excited to hear if he enjoyed it!

Thank you for the video. I always enjoy them, and usually learn something new! I do have a couple of questions, honest ones, and apologize in advance if they sound snarky, because I truly want to know. The pickled egg yolks. Why on earth did you freeze the eggs to keep them clean? Is your refrigerator not clean? Do you routinely freeze eggs to "keep them clean" before you eat them, like for fried eggs, etc.? Did you freeze the eggs used in the rolled eggs? And especially WHY when you then had to wait for them to thaw to use? It would have been so much easier just to separate the raw eggs and add the yolks to the pickling mixture. Less mess to clean up, much easier, so I really really want to know. And, why strain the eggs for the rolled eggs? I understand it sort of if you are making something that calls for a silky, smooth texture, like creme brulee, or pudding, but for a dish that contains chunks and pieces of other things? Curious. Thank you again.

Hey Ms. Linda! These are great questions, especially if you are learning how to make authentic Japanese dishes. I believe she wrote on the video that she washed the eggs well before she froze them to prevent salmonella because when the eggs frozen, the shells cracked open and that would expose the yolk and whites to any bacteria. The yolks were perfectly round so they would keep their shape and pickle better. By using certain 'pickling agents' - soy sauce and mirin, they help cure the yolks and toughen the vitelline membrane of the yolk. As far as straining the left over yolks, they were just just added to the miso soup from the storage dish. She cracked the eggs for the rolled eggs in a bowl and then added the surimi and other ingredients to the eggs, but no straining. The only thing she strained was the dashi broth for the miso soup. Hope that helps. LOL! I had to watch the video a couple of times so I could remember how the ingredients were prepared too. Have a great week! 🤗

Woooooow, this was so impressive! I love all the different onigiri fillings; the tuna one and the sausage one looked particularly delicious. I'm curious about the pickled egg yolks; I've never heard of just the yolks being pickled on their own so I was very interested in how you did it. And pressing the cute moulds into the tofu was pure genius 😃

Nothing is quite as lovely as a bunch of rice balls with different, fun fillings! My friends and I once did a picnic, but we didn't think to give our onigiri caps, so it turned into onigiri roulette 😂😂 it was still fun and delicious though!

Is it safe to eat pickled egg yolk outside of Japan? I know you have strict regulations that allow you to eat your eggs raw, but that's not the case in the US. Would pickling them kill any salmonella? I REALLY want to try that rice ball!
