In Java Edition, you can use the debugstick item to change block states, which includes opening trapdoors that would typically need redstone, or you can use WorldEdit to set a block in the chosen state and orientation.

You should be able to if you have perms to use cheats (to give yourself the debugstick) and/or use WorldEdit on that server, but most likely not in a general multiplayer server
