BENGALURU, INDIA - Today we’re going on an ultimate Indian food tour to eat 3 totally different types of biryani. Biryani is not just a food, it’s an entire culture, lifestyle, passion, and one of the greatest single plate meals on earth. Get ready for an Indian biryani overdose!

Mani Biryani Hotel, Hoskote, India (maps.app.goo.gl/9KuqQerGdcuTy...) - To begin this ultimate biryani tour we had to start driving at 3 am to reach Hoskote, a town about an hour away from Bengaluru that’s legendary for their early morning biryani. What started off as a popular truck driver biryani, has turned into a biryani pilgrimage destination. And once you taste it, you’ll know why. Their Hoskote mutton dum biryani is one of the best plates of biryani I’ve ever had. They sell thousands of plates per day, and one pot is almost 1000 kilos of rice and meat!
Taj Hotel, Bengaluru, India (maps.app.goo.gl/4DuCEPVGVDbBb...) - Next up we’re trying a totally different style of biryani, which Kripal called Bengaluru Muslim style biryani. They still cook it the traditional way over fire, and meticulously do each step to follow the correct procedure. The result is spectacular, extremely fluffy rice, rich from the yogurt and ghee, and with a beautiful, yet less punchy spice masala mixture.
Shivaji Military Hotel, Bengaluru, India (maps.app.goo.gl/bvJu1YdnTvxeJ...) - Perhaps one of the most famous restaurants in all of Bengaluru, Shivaji Military Hotel has taken eating to an extreme sport! And once you finally get a table and sit down to eat, you’ll know why there are so many dedicated loyal followers. They are most famous for their Donne biryani, served in a leaf. It’s astoundingly delicious and paired with their meatballs and peppery masala frys, it’s one of the best restaurants in all of Bengaluru.

I am from Ethiopia and when I was around 10 there was an Indian near my house. I got the opportunity to eat and it was a real fine Indian cuisine. Indians are real legends of best cuisine.

I'm a Nigerian but I'll give respect and recognition where it's due. India has one of the absolute best cuisine in the World. The very first time I tasted Indian food while I was schooling in France I was blown away by the aroma and the extreme savoriness of their dishes. A Biriyani dish cooked right is like a meal only fit for royalty. Indian food will make your taste buds continue to crave more of it even when your stomach is full. I'd love to have a full Indian food tour whenever I visit India.

I made jollof biryani - biryani made with jollof rice. It was delicious. Adding to the mix of food cultures, my son ate it with a banana Somali style. I'm Indian by the way.

Thank you for the kinds words Oga. Actually biryani started off as a nomadic dish of the Central Asian Turks. When they spread out into the Indian subcontinent and establish empires they brought this food with them and it was fused with local spices and cooking methods to become the super dish it is today. I am Pakistani btw and I am always on the lookout for different styles of biryani. I have tried Iraqi biryani, Lahori biryani, Sindhi biryani, Lakhnavi biryani, Hyderabadi biryani and Keralan biryani. The best is Lakhnavi hands down. 'Lakhnavi' means from 'Lucknow' which is a classical city in northern India. I wish the best for my Nigerian super eagles and adaab to any Indians reading this!

Mark, excellent content. One suggestion: You should give the Chefs a couple of minutes of screen time. Ask them a couple of questions, and allow them some fame. The Chefs who created the largest biryani looked like he was hoping for some acknowledgement, and a moment to appear. Is not the Artist of greater importance, than those who appreciate the art? As for this content. WOW! What a huge pot of love created with love. I think I was salivating just watching the biryani being made. Beautiful!

Extreme sport sounds right. I went there last year with the family members and we had to stand next to tables waiting someone to get up. We ended up sitting in which ever seat is available. 9 of us ended up sitting in 4 different tables. The biriyani was excellent after waiting to get the table. The experience is worth going there and eating biriyani.

This is my favourite Biriyani spot in Bangalore. You can taste every mutton flavour in the rice which you will not get it in the Hyderabad dum Biriyani.

Incredible to watch, I've made some biryanis and my tip would be, start with a good recipe and over time keep records of quantity of rice, water and salt used, these three things are the most fundamental and when you find the best balance it's a great result. Always remember ingredients like tomatoes or some fruits will add moisture. Wish you the best on your biryani journey.

The style I'm doing lately is I would say 7/10 spicy, not too much, but the Lamb/mutton, is started over charcoal so it becomes smoked from the drippings but not fully cooked. When you add it and begin making the gravy etc, you get barbecue smoke flavour all through the gravy... It's incredible.

@@bimotavdue4129 ooh that's cool. I practiced a mix of Muslim tamil style with some of my own variations. Needless to say it's abt 7.5/10 I'd say but to bring consistency is the hard thing at home especially when you are cooking with different ingredients each time and different pots but when I get to do it the way I intend to do it it's 8.5/10. One thing I know well is that it tastes unique atleast apart from every biryani I've had I've been told this by my friends too. And starting the mutton on BBQ is rather brilliant. I'd guess it's hard to find the right cook time so that the mutton retains the charness yet it's half cooked so it gets fully tender at the end of the process

Yes that's a good point! For that reason I use cubes of shoulder meat, not the cheapest, but it means you only make a small charcoal fire and not waste fuel. Wish you all the best with the cooking! 🍚🍖 🔥

That charcoal on the lid top and subsequent moisture absorption were epic culinary techniques which are widely seen in Central Asian countries cooking techniques, also in the Middle East. I know it for sure as I follow an Azerbaijan village couple's cooking videos on KZfaq.

There was a lot of cross cultural exchange between pre islamic and islamic central asia and Hindu Buddhist India from the silk route to the islamic invasions of India. hence one can see lot of similarities in food, cultures and even some languages

I think half cooked dry rice layering is called biryani Boiling it in gravy is called pulao

No it's called Tahari. Pulao is similar but the meat is cooked first with very little spices so that the water is clear without color. Then the meat is removed and water filtered. The meat is them cooked some more with some more masalas. The Rice is cooked in the aqni of the meat ( ie meat broth) then the partially cooked rice is added to the meat along with a bit of water, milk and lots of other stuff and then given dum. Tahari is strong garlici meat cooked in tomatoes and onions with a good gravy with multiple masalas. Then raw rice is added to cook in the meat gravy. In South india they do a bit of pre cooking of rice and then mix it up with the meat and give dum. It still remains a Tahari. Beleive me I have met cooks who worked in marriages and in Buhari hotel in chennai who cooked biryani. They are all dead now. They clearly admitted that they learnt by watching Hyderabadi cooks in Tamilnadu in marriges with Hyderabad people. But they didn't remember all the techniques so they came up with their own result. Decades later I old age they realised they were not actually making biryani. What they didnt realise was they were making Tahari with a bit of biryani twist in the end. It's Tasty stuff, different but tasty but it's called Tahari both in Hyderabad, and UP.

People make that mistake often. Pulav is more lighter. Also to understand you have to know that the layering type briyani came through Persian routes via Mughals. While these briyanis you see typically in states like TN Kerala and Karnataka came through Arab traders and old dishes in the region called "Irachi soru" which means meat and rice. That's why the difference. Essentially both are briyanis. Some people gate keep and think only one type of briyani exists that's a definite no no.
