Streamline your massive garden hauls by pickling all the things! In today's video, I have a pretty good size harvest I need to preserve, but how do I get all this done in one day? Enter "One Brine to Rule Them All". A method I came up with a couple of years ago, where you mix up a basic brine to cover everything, and then add seasoning right to the jars to adjust as you go. Pam says- Gardeniere is a lovely pickle combination- cauliflower, carrot, long hot peppers, celery mix with a dill oregano spice. Olives are optional. Cover with grape leaves and a bay leaf to improve crunch. Mine is a fridge version and is still going strong after four years. You can reuse the liquid with minimal additions just add in more veg with a little salt and wait a week or two or six. 😎

Hi Rachel - You can save money on Pickle Crisp. All it is, is Calcium Chloride. Amazon carries Calcium Chloride made by Pure. You can get a pound for much, much less than even Walmart sells it. I try to do most all our food organic. Pure seems to be as clean a brand I can find that isn't organic. And it is in stock. Enjoying your videos. Doing some binge watching today. Hoosier hill also has the Calcium chloride. Also the Ball pickling salt is just salt, I use pink salt.

There are 16 cups in a gallon. I find it easier to just pour in the gallon when making a lot of brine, then measureing out the remaining vinegar as needed Kris in Orlando

It's always good to have practical tips! I remember how shocked I was when I first started canning at how long it took! Streamlined processes, especially like pre-making tomato sauces or chopping all your veggies at once make things go assembly line quick! Thanks Rachel!

I wish you a quick recovery from your procedure. I know how it is to keep going with the preserving when you don’t feel well. I had two major surgeries in June with a lengthy hospitalization. Every day I try to preserve something so it doesn’t become overwhelming it it sure isn’t easy. My cucumbers aren’t doing well so I won’t get all the pickles I planned. I planted more cucumbers but I don’t know if I will get a good crop from them.

Pruning. Maybe Rachel has tips. I have so many cukes it's crazy sweet. Mine are not the variety especially for pickles, so I tried one qt. for the fridge. Newbie so anything is possible. Too much spice maybe. lol

Wow - canning every day! I too had surgery in May, and I've only just been able to start canning again. Meanwhile the garden continues to pour its produce forth.. i have managed a few small batches both WB and full canning. We have to be kind to ourselves on those days we just have to concetrate on getting well.

@@lat1419 I don’t can every day. I preserve every day. Sometimes it’s cutting up peppers to put in the freezer. I can do that sitting. Sometimes I wash and dehydrate herbs. I don’t do large batches of anything. I am being very careful to not overdo. I don’t want to land back in the hospital.

Rachel, you have inspired me to start canning. Today I canned my first batch of Spicy Garlic Dill pickles. I totally enjoyed the process. My mother-in-law’s water bath canner sprang a major leak and we went out bought a new one. I can’t wait to continue my canning journey. Yes I did start my canning journal. Thank you so much!!

That happened with me and my mom's old canning pot. I was filling it and I kept hearing something. I had water inside my stove. Yes, it ran in the burners and down. I was listening to an audio book and didn't catch it right away.

About 6 years ago it was so jot we decided to bbq our beets so not to heat up house, well they were so good roasted then pickled or froze or we ate alot too, so good love them that way more then boiled I'd find you boil all the flavour out So we roast now Nice products you have

I love the streamlining agenda and I appreciate your sharing these tips. Feeling bad is a great way to demonstrate WHY. Anyone can be under the weather, distracted, or simply have too much produce to cope. Thank you! I hope you feel better soon! I think I said something before Rachael, but I have a chemo brain so I Can't remember. I save my vinegar containers when they are empty and clean them and use them to store emergency water. I think I have 30 gallons of emergency water beside my 5-gallon jugs. It was so handy when San Antonio froze a year ago and we were on a water boil. For 3 weeks after I used that water running it through our zero water sustem. We have since upgraded to a berkey. After the water is a year old I use it through the Berkey instead of tap water. Then I refill them and redate them.

I just want to tell you that this year was the first year I have ever grew nice green peppers! I don’t know if it was because I took the tops off when they were seedling like you showed us or it’s just a good green pepper year but I thank you for spreading the knowledge and making it enjoyable to learn. I bought loose leaf tea bags off amazon and put my pickling spices in that and seal them. Toss it in the pot, makes it so much easier to fish out verses fighting with cheese cloth. Feel better Soon

Rachel I’m saving this great video to my KZfaq canning folder and watching again. Love this. Feels like it did when I was with grandma growing up. She loved pickled beets and cabbage. She made a lot of different pickles but I was too young and she didn’t teach things to kids much. I’m 57 now and so miss having someone to can with. I’ve never had success with pickles as they get soft but I try every year. Thanks for the tips.
