Interesting assortment of foods. I lived in Florida for 2.5 years and did not visit Disney World once. I'm not even sure if Disney Springs was a thing back then. Try making your doughnut and cheese sandwich at home under the broiler instead; and, use your favorite cheese. I would use mozzarella cheese, myself. But, you could use pepper jack cheese, if you want.
