A tip on flipping your wings. Place 2 baskets together and flip the whole thing over at one time.

I did some wings on my Weber kettle with a homemade vortex. They were crispy juicy done in 30 minutes. I'm envious of your old hickory smoker.I checked on pricing one!wow expensive. I bought the biggest pitboss I could find. I sell a lot of ribs and pork belly. Haven't heard any neighbors complaining about the smoke yet. The whole neighborhood smells incredible 😍 sometimes I have 3 smoker's and my barbecue going at the same time. I built a cold smoker for doing cheese salmon and homemade bacon. Happy holidays. Smoked deviled eggs are awesome too in my cold smoker. It leaves such a good after taste in your mouth I use a lot of cherry wood and apple.

Weber summit for sure. Less time, more crispy. For larger crowds then the ole hickory definitely doesn't disappoint! Great smoke flavor. The only difference is the ole hickory max out at 300 degrees so it requires a lot of cooking spray to really crisp up the skin.@@lamarwilliams185

love your ole hickory videos!!! I have a CTO-DW for a joint i'm opening up soon and did just 2 cooks on it and was amaze on the amount of smoke it imparts with just a log or 2.

Hey Dski, you seem to be using the Ace MM quite a bit...you know your other twenty grills are getting jealous, could have a revolt on your hands. 10 lbs , hope you shared, looking good

Thanks for doing this video. My question is regarding the moisture content of hardwood you would use. To get high quality bbq on a Ole Hickory can you use low moisture content wood - or does the wood have to have high moisture to smoke?

Low moisture works best with the Ole Hickory. It provides plenty of clean smoke making your meat come out fantastic. Hope this helps

Quick question when you flip your chicken wings did you spray any type of olive oil on the ones before you put the seasoning back on of the Wings

No I did not. The wings already had enough moisture where the seasoning stuck to the other side with no issues. Thanks for checking out the video!

Was it crispy like your “crispy lemon pepper wings” video? Trying to see what’s the best temps and time to cook for the perfect fall of the bone crispy wing

Derrick Wilson No. The lemon pepper wings were definitely crispier due to the ability to cook at a higher temperature. The ole hickory is a dedicated smoker that has a max temp of 300 degrees where the summit reaches well above 600 degrees. I believe in the lemon pepper video I cooked the wings at 400 degrees. Dski-I have been thinking about getting the ACE JR based on your videos alone. Only concern is the limited temp range to 275 which seems not enough for certain meats. Was that a concern of your before you bought the ACE MM? Thanks!

Scott Carlson I can totally understand your concerns but remember this is strictly used for smoking which puts 275 in the high end of that style of cooking. I have smoked everything from Brisket, whole hogs, chicken, ox tails, and pork busts and all have come out phenomenal. If you are looking to a dedicated smoker, I feel ole hickory is a great option.
