This week I lost my voice! But don't worry the tips of the week is still here I just switched it up a bit. Let me know if you like this one and I'll get to work on some more like this...
In my spray gun by the way is just water :-)
Straight White Dough Spec:
500g Strong White Bread Flour
315g Room Temperature Water
15g Olive Oil
12g Fresh yeast or 7g Dry
8g Salt
Kneaded for 8 minutes. Rested for 90 minutes. Divided into 75g pieces.
Then, Shape your rolls, prove up for 45-60 minutes and bake 190C fan/374F/Gas mark 6 for 15 minutes with steam.

Found BakewithJack on Utube. just love baking sourdough bread its now a regular thinkg for me to do each week. Easy to follow and Bread is lovely. found this very therapeutic during lock down.

Us mortals don’t get the day in - day out practise like you Jack, that’s why it all looks so easy. The bun which you impressed with the rolling pin (about 7th @ 4mins and looks like lips) coloured with red food dye before or red icing after baking and calling it a Botox Bun 🤓

Watching bread making is truly addicting. And relaxing. Also motivating me to make bread today at all costs. I always make my own bread but not feeling well so I have been out for several days. Making dutch babies doesn't count. Last time I was out of bread and going through withdrawals I ate a whole loaf as soon as I could touch it without my fingers melting. Bread is a necessity. You know I subscribed! Nice to meet you!

Great video! I love seeing the different seeds etc you can top/incorporate into bread. Had some trial and error with Parmigiano cheese on top. Still haven't figured out how to get garlic on top without tasting burnt!

Loved the demo for shaping rolls. I was a bit surprised to see the same folding technique used for an entire batch of dough ... only for each individual roll. Hope you get your voice back soon ... BUT ... if you don't you can do more demonstrations. lol

BTW, I wanted to tell you I made the best soft pretzels with your bread dough recipe... 500/325/20/8/7! The kids loved it. My wife even allowed me to hold her hand afterwards! Not bad!!!

That was so fantastic and so cute!! Please could u help me with these question? 1. for shaping the dough when you first fold in the two top corners of the dough then you roll the dough, is it because we don't want the dough to expand from the two ends? we don't do this for baguettes. 2. what's the real purpose of kneading the dough, when time and folding can build the structure and develop glutens? Thanks a lot!

Get better, Jack! Rest your voice and sip some nice warm tea! I don't know if you've heard this misinformation about breads before: My mother always insisted that the lovely splits and ears on loaves can only be achieved if the bread is partially baked before being sliced!

Makes sense actually, BECAUSE.... then there will be a dry surface to the bread, and in the cut it will be super soft and moist in comparison encouraging a nice clean tear! Although... I’ve never done it 🤔

@@Bakewithjack I will definitely not say I'm an accomplished baker, whatsoever. I tried when I was a teenager, and it did not work! It's quite possible I did not cut the loaf soon enough.

I like the idea of cutting the bread, would be easier for tearing, as in a soup roll!

Only just joined your vids yesterday.my loaf turned out Brill,put sundries Toms in it with garlic on top.very pleased with my efforts.not overly looked but have you done Chelsea buns,just wondering about the rolling out and shaping.

I watch your videos evrytime I need to get ready to make a sourdough boule but everytime it proofs and expands nicely in the banneton, when it comes to placing on the parchment it spreads and doesnt rise in the dutch oven. advice??

Inspirational Jack. Why does my dough not handle lie yours? Tried the latest Sourdough system with 2 loaves worth. Followed instructions spot on with Duchy Organic Strong White and it was soooo wet I couldn't handle it. Another frisby!! Horlicks!!

Do those techniques scale up? E.g. I usually have 250 - 300g of dough per bread, and don't know whats the best way to shape that. I usually try to go for a baguette shape but it's a bit fiddly. Maybe something like 1:56 should work?

All bread I make is sourdough and I have the best luck with proper and consistent rising with the rolls. Yesterday I baked a round loaf that had been shaped in my banneton and left in the fridge overnight uncovered...I was so excited at how beautiful it turned out, but it wasn’t cooked through the middle. 😭

Hi Jack, I like dried fruit in my bread. How do i knead my bread in a way that does not expose the fruit so that the fruit say raisins does not become charred? a short video on this?

Not an expert by any standard, but what I'd do is: 1. Roll out the dough after bulk fermentation. 2. Sprinkle your dried fruits on the surface, then fold in half. 3. Put more raisins and fold in half again. 4. Fold the 4 corners towards the centre so as to trap the raisins inside. 5. Flour the top surface and flip the dough over and make it into ball.

I've been using whey for the liquid (I make cheese from my goats milk, so whey happens regularly lol), and a touch of honey. My loaves aren't risin2as I'd like, even though my starter is quite enthusiastic. Amy suggestions, or plans to do a video on this? *pleading puppy eyes* 😉

Help ,,, my bread dough is getting worse ,,, I'm trying to follow your technique for no extra flour kneading and a lightfingered style following your kneading instructions. What a sticky mess I got into this morning!! There was dough everywhere except in a smooth round ball ,,, going from bad to worse here. Proving as I speak but goodness knows what it will turn out like. By the way your scraper is brilliant for cleaning the worktop ,,, still awaiting the results on the proving cloths. PS Love your videos and I am definitely failing first lol!

Hi Jack, the recipe doesn't look right. Maybe it was from a 1 kilo recipe, and you halved the flour but forgot to half the water?
