It's the weekend, it's snowing, and super cold outside. We don't have any plans to really go anywhere, so why not stay inside and whip up a nice pot of chili to warm us up from the inside out. We'll also make up a quick batch of cornbread to go with it - but apparently our oven is broken - so why not try to make it in the Instant Pot? Not sure how well it's going to work, but let's give it a try and see how it all turns out ♥

We are snowed in here in southeast Iowa. I had told my husband that I was seeing a lot of people upset that they couldn't get out of their driveways to get to the grocery store. AND I told him how thankful I am for our abundant garden and the amount of canned goodies that we were able to put up this year. Not to mention the four deer that he and I put in the freezer. Feeling very blessed and appreciative of our hard work.

We haven't left the house in 4 days and no problems. Food supply is never a worry. We are in northern Iowa.

We're also in Iowa. Between Cedar Rapids and Waterloo. We weren't exactly snowed in. We could get out if we wanted to, but because we were prepared, we didn't have to be the people trying to drive to the store in a blizzard. It was nice. We made a chicken pot pie and ate pickled beets and dill beans from our pantry.

Hi Rachel and Todd, I live in Vermont, and we are like you all--we used to get TONS of snow, now it's often slush or rain or a small amount of snow that melts off into ice. I'd rather have a whole lot of snow, because at 74, I can walk more easily in shoveled snow paths than on ice. Also, there's snow-shoeing when you actually get some snow! Thanks for this video, always fun to watch you guys doing things.🌻

I had the same thing happen with my oven..I needed to bake some bread and I used my 18 quart roaster. Worked great!

Rachel, It is 24° with 14 inches of snow in Grand Haven. Made my loaded potato soup for dinner tonight. Still doing great on the pantry challenge.

I live in Montgomery County Tn. It's about 45 minutes north of Nashville. We got about 5 inches of powdery snow. Supposed to get some kind of mix on Thursday. We don't get snow here like we used to. Usually ice storms. Ugh! Didn't make it above 12 degrees yesterday. Clarksville is still cleaning up from the F3 tornado that hit Dec. 9 th. The south doesn't have the equipment to clear up the snow quickly. We have secondary heat source if power goes out. Camping stove to cook on. Some of my coworkers laugh at me being prepared until we have bad weather and no power. Love the walk around in the snow with you all.

Hi Rachel and Todd. I can't believe it is snowing in Michigan. My area had no snow last year. And I don't know how much snow my area is going to had this year. But I am glad for you Rachel. Born and lived in Michigan my entire life….I can honestly say snow would be great at Christmas thru New Years… then back to no snow and at least 30 degrees would be awesome… also my Boston Terriers are not thrilled going potty when it is 8 degrees 😂🐾😂🐾😂

I never heard of putting pumpkin and all those other vegetables in chili soup. Looks delicious though. It was minus 19 last night with wind chill of minus 40 last night here in SE Nebraska. Been snowed in for two days. They stopped the snow plows because they can't run in this cold temperature. We had several cars stranded on roads and nobody could come to rescue them. They finally got rescued today. My car died and the battery was dead because of the cold. Make some handles with aluminum foil to lower it down into the instant pot and use those handles to pull it up too. You just roll a long strip that goes underneath the pan and goes up both sides. Does that make sense? Sorry about your oven. You know you could cook that entire meal on a gas grill outside if power goes out. We had a foot of snow. You don't want it, trust me. It's beautiful but, a pain in the butt because I do have to commute as a traveling nurse. I've been snowed in for days. Missed 3 out of 5 days last week. ENJOY! Good job with the meal giving all your challenges.

When you guys were eating, I noticed something different, but I couldn't put a finger on it until I realized it was because Todd is not wearing a hat. Todd! You have a full head of beautiful gray hair. I don't think the audience gets to see that that often. You should show it off more 😀

Your soup looks delicious! I,too, often find myself wishing we had more snow than we do in the winter. I’m in Ohio. We haven’t had a good snowy winter in several years here either. Have a wonderful week!

I had the exact same stove as you. Had a warranty on it and they serviced it 2 times. Finally got sick of it and bought a GE. The difference is unbelievable. My pressure canner even comes to and stays at pressure way better. Two other women I was talking with had exact same problem with oven temps and having to be serviced. Will never get any samsung again. Chili looks really good by the way. Stay warm

After Katrina, my family cooked everything ( including corn bread and pizza) on the outdoor grill for two weeks until the power came back on! 🙂 They lost just a few things from the freezer. 🙂

Love your cellar pantry it’s a dream, May I suggest painting the front of your canning shelves in chalk board paint. Then you can write what’s on the shelves with white or colored chalk. Easy to see and erase when you need to change what’s on the shelf. Thanks for sharing your knowledge with us!

Arkansas girl here and we are experiencing an "artic blast" blast today, and so far I'd say we have received about 6-7 inches of snow with more incoming throughout the night. And I'm gonna be honest, I'm not a fan. It's pretty but sort of depressing kind of pretty, because in the south because life sort of stops when it snows. We aren't used to it, aren't prepared for it and everyone just sort of hunkers down and waits it out. Lol. But thank you for the video, I always so enjoy your content.

It has been snowing (and is still) like that here on the west side of the mitten (30 minutes north of Grand Rapids) since Friday morning. We already have exceeded the called-for 14 inches, and it's supposed to snow off and on through Wednesday. I don't have the same fixings as you canned up, but am happy to have been able to put up more than enough food to share. God is good! We've had no power outage here, but are prepared if we do. Audio is noticeably better with your new system. Video: colors are brighter and more vivid, and the overall picture is clearer.

I love the snow too! I'm down in SW Louisiana & we fixing to get it with temps in teens plus rain...no fun. I'd much rather snow. I lived in Utah & it's still my most favorite place to be. I traveled in a semi in many places with snow. Never got tired of it. Y'all have such a beautiful place. I've baked cheesecake & cake in my Instant pot but not cornbread yet.

I grew up in southern New Jersey and loved the snow. Here in Las Vegas, we rarely see snow, but I can see that there’s some on the mountains 😃

Grand Rapids MI… we had over 9 inches here (maybe 10-12) 🙂. It’s beautiful! I live in an area that has lots of underground electrical, so am thankful we often don’t lose power.

I’m the same way, Rachel, if it’s going to be cold, we better have snow! Yesterday and into the night it snowed probably 10”. We usually are a dry climate, so this was such a blessing for me! The high yesterday was 17F, so it is cold.

I live in the PA Appalachian mountains. There’s nothing better then a snow day when you don’t have to go anywhere. I love the comfort food & curling up under warm blankets. We just got a dusting of snow with a lot of wind & cold. But, I still have comfort food in the crockpot & pumpkin muffins in the oven.

I didn’t realize you were from Louisiana! I’m native north Louisianan in the piney clay hills. We have about an inch or so if mostly ice right now with night temps in the teens. Day temps were in the 30’s but will be 40+ today. You know we don’t know how to act in snow and ice. Hahaha I canned pumpkin cubes for the first time this past fall and can’t wait to use some in our next chili! Thanks for the ideas you shared. I bake my cornbread in cast iron, too, but that cornbread in the instant pot looks amazing!

When you use a springform pan in the instant pot you can use a sling underneath it to get it in/out. I’ve also found it works best to cover the pan with foil so you don’t get the moisture in whatever you are cooking.

Rachel . I made cheesecake in the instant pot. The instructions said to fold an 18 inch piece of foil and create a sling to lower the springform pan down. Fold the ends to keep below the lid. When done baking, you have a way to lift out the pan😊

If you make a aluminum sling for your instant pot dish you can lower and raise the dish in and out of the pot easily.

Hi Rachel, I freeze my milk in usable portions so I never need to waste any going off, just need to plan ahead a bit remember bering to take it out , but you can faster defrost it in cool water in its container, if you need to. You can also bake in your slow cooker too , just need to place a tea towel under the lid when you cook it to absorb the moisture 😁

Freeze cubes of full fat buttermilk in mini silicone trays...then pop out and put in freezer bags...you will always have buttermilk on hand...I always half a half gallon in the fridge for biscuits...cornbread as well as other things and I just love to drink it

I was in the Kitchen almost all day preparing for this coming week, German green bean soup, chicken noodle soup, and curry chicken and rice with sweet peas also made our Kombucha F2 with organic fruits and last I made some Rice crispy

22 inches total last week by me in WI, now its -10, feels like -22, and the snow isn't up yet so we will drop another few *. Nothing better than a good warm soup for a cold day. Isn't it fantastic to just dump dinner out! I had commented on your flannel and see we don't have that store in WI, sadly. I'm loving the sweatshirt today as well, and the flannel/wool? you had in the last whats for dinner. I love comfy flannels. lol Have a great week.

I tell my hubby I wish for more snow when it is cold and have very little. He says I will get tired of it soon. I haven't in 13 years of Living in Flagstaff. (He is from Maine). I love it when it snows like the other day. It is so beautiful.

If your oven goes out, you can use your roaster (the one you cook down your tomatoes in) as an oven, your cast iron should fit in it. As for snow, you should live here in NW PA, we get about 185" a year.

Wow! My husband and I loved this video! Love seeing the snow and your homestead. We regularly watch you and Todd. Ya'll are such an inspiration to us! I used the Green stalk for the 1st time last year. I'm very new at this. Now that everyone is starting to plan this year's garden, it has me thinking.... I left my green stalk sitting outside, the soil still in it. How do you manage your green stalk in the winter? We live the upstate of SC so our winters are mild. Thanks for any suggestions! We have the same appliances. Our “ignited” did the same thing on Christmas morning. My husband was able to order one from Amazon and replaced. Works fine now. Good to know about the Instant pot!

Rachel, you be crazy! LOL! We got 11 inches of snow in my town in Indiana. Honestly, I detest it. Especially when I think of those less fortunate who do not have shelter. I've said for many years now that I'm residing in the wrong place. I want warmer air and a longer growing season.

Never made cornbread, but this inspired me. Made a nice pot of chili and my first cornbread. I used raw sugar instead, and I had milk, so I added tblspn of vinegar to it to make the buttermilk.

I always add vinegar or lemon juice to milk to replace buttermilk. I thought the baking soda needed the acid to do it’s stuff. I love how you adapt when something goes awry. !!!

So pretty the snow is! We ended up getting over a foot of snow on Friday! We ended up making chicken noodle soup.

Yes! Snow makes everything look so much better. I absolutely despise winter slop when the ground isn't frozen.

If you make a foil sling and put it under the springform pan, it’s lots easier to get out of the IP.

Here in Scottville, Michigan. It's 13 degrees, and we have close to a foot of snow, if not more. Your dinner looks wonderful 😊

The thing I'm thinking about canning is that, those parts of a meal that takes a long time to prepare, one can have them ready on the shelf. Then, putting the partially prepared pieces together, it's still like having a freshly cooked meal.

Thanks for the chili recipe! Same stove and same issue 3 times since last summer. I made cornbread by pouring on a griddle like pancakes and just had really thin ones in a pinch.

I love it! I have all of those things in jars too except beans and I’ve got to try this! Thank you! I’m only 3 months in to pressure canning and making anything other than jams and chutneys!

In your last video I was surprised you didn't have snow. We got the heavy snow in Iowa also and then came the wind and light fluffy snow, and a lot of it. Our wind chills could be as low as 45 below 0 degrees F! It's so easy to make chili when all you have to do is throw in jars! It's a little bit different every time. I love it!

When making something in the Instant Pot like that. I have always covered it with foil, so no water or steam got in. Nice to see you didn't and it turned out. May be it would have been more fluffy if you covered it. I have only done cheese cake in the IP. Ok for getting it out of the IP, take and fold foil to about 21/2 to to 3 inches wide when you fold it. Putting it under the pan and to the top of the IP, so you can grab it to pull it out. Then set the pan on top of it. Love from Western, N.Y.
