I'm using weck-jars for more than 50 year. They still are fine.only the gasget i buy every 2 or 3 year new ones. They are cheap in the Netherlands were I live . We can buy sugar with pectine. No messering at all. Sorry for my not that good writhing your langues,. I'm almost 70 and i like it that you use our europese jars. Have a Nice Day.

I mainly use Weck jars now although I do have Kilner jars which have the 2 part screw lids. I'm afraid the shipping of Ball jars from the USA to Ireland make them extremely expensive. I find the Wecks are really effective and look good. I can't find pectin here in Ireland so I use the old fashioned method by boiling down cooking apples and passing the juice through a muslin, it works a treat.

I did this recipe today with fresh seedless watermelon from Walmart and lemons from my own tree that I harvest the juice from and omg it came out so good processed in my oven with weck of course. Thx u Constance.

This is what is so great about your Vlogs. Your such a great teacher and I always learn something new. I'm a senior and have done some of this but you always have new information.. You can teach an old dog new trick's.😃 never gave it a thought about watermelon jelly. Thanks!

Wow, that watermelon jelly looks amazing!! :) Very nice video! I love the Weck jars too, and you can actually see if there is a vaccum if the pull tabs point downwards after cooling down.

Hello Constance! I just discovered your channel this week and love it. I love all things canning, cooking, gardening. I sew a little and am going to try your apron. I had never heard of Weck jars before. I like the glass and reusable gaskets. Thank for the information on the Weck jars.😊

Today has been a herb drying day. We had a frost 2 nights in a row, and my herbs have to be picked now. Took a break, and was glad to see another video from you. I will have to consider trying weck jars. Have a blessed day.

I do like steam canners and have two. One is a regular steam canner and one is a combination steam or water bath. Steam Cannes use a small amount of water.

I love the beautiful kinda old fashioned loom of the jars and the added bonus that they are reusable is a huge plus! I didn’t know there was low sugar pectin! Love watching your videos ❤️🙌🏻 You remind me of my cousin who is from Michigan, you could be her twin 😀

Thank you :) Yes, there are a couple different kinds of low sugar pectins. I just recently got some of the Pomona kind and am going to learn how to use it.

Great video thank you. I'm in the UK and this is my first year preserving. I have used several types of jars to can including pressure can and hands down I love the weck jars the best. I get them shipped directly from Germany. The two biggest benefits are you don't have to replace parts each time you can with them even the rubber gaskets you just check for wear and tear and if ok you reuse. The second massive benefit especially if you have limited storage space is you can stack the filled jars on top of each other and the seal won't break. Also if you have the 1/2lb jars they stack inside each other when not in use. They are truly beautiful too.

Couldnt stacking create a false seal on the bottom jar just like if you stack any ball jar?

I've seen people can in these but I've never tried it. Honestly I thought they were really old jqrs that aren't made anymore :) if I come across them I might pick them up. Thanks for sharing.

These remind me of the old fashion Ball jars my family used when I was a kid. Instead of clips they had metal wrapped around the neck with a hinge to clamp down the glass lid.

I have 12 1 quart, and 6 fluted jelly jars. I haven't used yet either lol..... I remember my mom used these jars too when I was growing up in the 60's

Aw.... I always like the mason jars, but they are só expensive here in the Netherlands! Crazy how prizes range depending on what country. But weck is awesome too! Its just the lids if you want to store something, but they have these storage lids now as well. Actually its better to put you elastic on the lid first and then put it on the jar. Especially with wider mouth jars, the elastics will tend to fall in the jars, or they won’t seal well, cause you can move them from the rim. Great idea this watermelon jelly! Looks yummy!

Great information, thanks for sharing Constance. I like the idea of reusing everything and no plastic parts. Would you recommend these for a newbie to canning?

I don’t think they are any harder than regular Ball or other brand jars. I was actually quite impressed with how easy they were to use. So I think even a new canner would be able to use them. The only tricky part would be the size of the jars. Always “round up” when it comes to processing. For instance, if your recipe has processing times for pints and quarts, but your jars are an in between size, you would use the quart time. So that would be the only thing to pay attention to.

Hi Constance, I wasnt able to get my canning stuff this year so I had to skip it. I am hearing though that canners etc are supposed to be more widely available in November so Im keeping my eye out. You are such a good teacher. I think I like these jars much better than the ball jars. What do you think?

I LOVE all that you share and all that I have learned from you. I too use glass for storage etc. and love the idea of Welk jars. I feel I want to say how much effort it takes for me to keep my attention on your words while there is music playing in the background. I’m sure I am not alone in this . I can’t understand the benefit of having it and after a longer video am left with a headache from the constant effort of listening. I’m hope you understand what I am saying and would consider not using music. Again I thank you for what you share and am grateful.

Great video - being that my husband is diabetic I have switched to Pamona's Pectin. Not sure if you have tried it but I've had great success with it. I can use very little sugar, honey or a sugar substitute. It also is a natural pectin and never expires. It was still available at Pamona's website and I usually purchase it in bulk which is much cheaper. You have an awesome day and many blessings to you! PS - I saw the comment about the music and though I can understand where they are coming from - I have to say I love the music.

Hi Pam, I'm not sure if it's an option for canning, but the stevia plant is a great alternative for sugar. Only one leaf will sweaten a whole tea pot. Also, cinnamom is great to keep the blood sugar stable. :)

Great video!! I so love watermelon jelly and I absolutely love those jars. Glass is the only way to go. You don't have film and such to deal with when you clean them. Where did you get your jars please? God Bless!!!

You place the gasket on the inside of the lid.... then, while holding them together with your clean fingertips, you place the lid, with the gasket facing down, on the jar.

Hello, great video. It is much easier to put the seal on the lid, and then the lid with the seal on, on the top of the jar. ;)

Constance, do the jars make any noise so you know they are sealed like a Ball jar the lid pings and you know you've got a sea.. That jelly looks yummy!

It doesn’t do a “ping” but it does do a “shhhooop” sound. LOL - oh wait, I was thinking of the Tattlers. No, these Weck jars don’t make a sound. You know they are sealed when you take the clips off.

What a gorgeous color!! Do you have any recipes that use an artificial sweetener or even less sugar? I'm Type 2 Diabetic and have to closely watch carbs/sugar. I've never had watermelon jelly, but I've eaten enough watermelons to make gallons of the stuff! LOL

I personally never use artificial sweeteners. I have very bad reactions to some of them so I am careful to avoid them. So I’m afraid I could not give you any personal advice. However this article seems rather helpful. pickyourown.org/canning_without_sugar.htm

Your jelly looks delicious. Do you ever make jelly without pectin? My step grandmother and mom made jellies without using pectin but I am not sure what they did different in the recipe. I love the look of the Weck jars.

I did a crabapple jelly when we lived in Alaska that didn’t have added pectin. I haven’t tried any others though.

I was gifted 2 larger Weck bottles that I think are 1 liter and 8 that I'm not sure of. Have you used the Weck bottles to can in? I can Cranberry juice and home juiced apple juice. I'm really excited about these bottles and can't wait to use them.

I wish I knew about the test to see about jelly setting. I made plum jelly yesterday (2nd time ever making jelly) it didn't set. I put a jar in the fridge and it seems to be setting...if that works will it stay set if I take back out of fridge? Or should I put them all in the fridge and leave them?

If it set in your fridge then it should be good to go. Let them come to room temp before you try to can them. Jelly is easy after you do a couple batches.

If it is in the fridge and seems to be set, then the additional jars can just be stored in the pantry as long as they sealed. Then as you open them, I would imagine they would firm up a bit when chilled. That test is handy! Many people will do it every time they make jelly or jam.

How sweeeeet to see the German Weck jars in an American household ;-)))) I found your channel last night and learned about steam canners from you this morning ;-)))) Over here, the Ball jars are becoming popular, but people always comment how much more expensive they are than the Weck jars ;-)))) Did you know that you can pressure can with them? The red rings are made of natural rubber and are fit for temperatures up to 265 degrees F. Depending on the size of the jar, you need to use 3 instead of the 2 clamps. And you can check your seal by watching the lip of the rubber; if it is facing downwards your seal is still intact, if it faces up, your seal is not working anymore. And just a question: Are these the official Weck rubbers? I am asking because here in Germany/ Switzerland, they are much thinner ..... Looking forward to all your videos. And your watermelon jelly looks fabulous!

Thank you! The rubber gaskets that came with the jars are nice and thick, and the label was in German. They are much thicker than the gaskets/seals that come with the other reusable lids I have. It’s funny how Ball jars are relatively inexpensive here, but the Weck jars are “fancy,” with prices to match! :)

And yes, whatever is the "unusual" for the respective region is the expensive one ;-))) But then again, as they are objects that serve you a life time, it is ok. with me. Have a great day.

I like making jelly and jams using the low sugar pectin but I Google watermelon it said its not safe please resume me about this I'm new and not sure what is safe and what's not please help

By itself, watermelon is not acidic enough. However adding the acid (lemon juice) in this recipe increases acidity, making it safe for canning.

I really have been returning again and again to Weck jars online. I need to make sure those rings are nitrile not latex (Harvest Guards are nitrile!) If I don’t buy them by Christmas, they are going on my list! UPDATE: Just got off the phone with the fantastic customer service at Weck. Sadly for me, the rings are natural rubber latex and the jars are not approved for use with any other rings. So, if you are latex allergic or sensitive, do not add them to your Christmas list 😢

This makes a small batch, so potentially you could. But you must have a big enough pot to accommodate the boiling jelly, and must bring it up to a boil quickly. If it doesn't fully boil quick enough, it can effect the gel setting.
