1) Changing the needle size is optional depending on the yarn and needles used. For me, working with cotton, it was necessary to avoid baggy stitches. In the video I switched from 4.5mm (US7) used for the stockinette stitch to 4mm (US6) for the i-cord.
Also, you can switch to a smaller needle size not from the start, but from Step 2 (2:05 min) - I find it is better sometimes that the first stitches are a little looser to make the connection in a circle easier - this may also depend on the yarn used.
2) SSK can be done faster, of course, (like we do decreases - slip, slip, insert the left needle from left to right opposite to the right needle, knit a stitch), but with cotton, for me, the way shown in the video produced neater stitches with a better control over the size of the stitches.
