Kudos to the assistant chef...given his demeanor, I presume he's still learning (which is why he's the assistant and not the Chef himself), but he did his best.

Did Chef Beer say he didn't speak English very well at the beginning? If so, he's either very humble about his language skills or have memorized an entire script for this event in a language he doesn't speak. In both cases, I think he deserves praise for doing such a good job at presenting everything in English. You two are making me really consider Thailand as a possible vacation spot in the future. Lovely hotels, affordable omakase, fresh seafood markets, lots of interesting street foods? What's not to love?

I have heard that, if you’re coming from the west/global north the main things to be aware of in Thailand and some SEA countries are safety matters- fire escapes/extinguishers, unsafe conditions in some places (jagged railing that could cut you without any cautionary signs, broken stairs, rough sidewalks) and traffic. This is anecdotal on my part but my understanding is scooters can be very dangerous especially when mixed with large vehicle traffic. If I recall correctly (I think) there are not many restrictions on scooter motor power so some folks go quite a bit faster than is safe and are injured. Safety seems to be one of the only downsides I have heard of!

I dont think they are using brown rice. Most likely(almost definitely) seasoned sushi rice which will give a brown color from the seasoning

I have no idea how they can only charge $20usd. I can see them using some local caught fish/ingredients to lower food costs but things like bluefin tuna, shima aji ,and other Japanese fish are high cost no matter even if you are neighbors to Japan.
