I'd love to see a Taste It and Recreate It episode, where one of the chefs makes an impressive dish and one or two of the normals gets to taste it, but no questions or ingredient hints, then the normal has to do his best to recreate it within a time limit. The inevitable meltdown would be a sight to behold!

@@drunkenwhaler9507 quick and easy..while un traditional still tasty. Brown 2 lbs lean ground beef and one lb ground sausage (any flavor) in the rendered fat sweat a chopped onion until soft. Take off heat add one bag of frozen mixed veg, meat and mix with onions. Cover with mashed potatoes and bake about 30-45 min or until potatoes brown on top. For a little extra mix in some sharp cheddar cheese into the potatoes and cover with some panko breakcrumbs before baking.

I work in a factory. We have a few production lines but I usually work on the canning line. One of the products we make is chilli con carne. We make supermarket branded chilli for pretty much all the UK supermarkets. Always my favourite to make because it always smells really good, but instead of a small saucepan i use a 3000kg cooking tank

I'm too broke to use the app and buy the books... So these videos have helped me diversify my cooking while being entertained. Thankyou guys. My doctor thanks you too. My diet consisting mostly of potatoes, carrot and pasta and stock was not doing me much good and I was miserable. Now I'm much happier and diversified my diet heaps

@@Anna-sc3gq That's probably because they aim at stuff home cooks are likely to have. Pressure cookers are amazing, but a lot of people don't own one.

@@xXJokerAtWorkXx True, but it's a valid trade-off for people who like shorter cooking times. There are also vegetarians who don't need to worry about how meat tenderizes. Pressure-cooked recipes would be a great addition to the already great range of options we get from Sorted.

Here in Texas where 'chili con carne' was invented - at least, we tell ourselves that....supposedly a way to cover spoiled meat on a long cattle drive - tomato and beans are supposedly anathema. It's supposed to be just meat and chilis and spices. (Maybe onions, too.) Personally, the first chili I ever ate was in New York, my mom's cooking, so I prefer it with both tomato and beans. I'll even use mushrooms, which might get me lynched by those who care about authenticity.

I have to agree. Speaking for all of Texas here, you are right about the beans. We’ve come around to tomatoes, but beans... well... We (the entire state) have chili cook-offs (competitions) for the best chili in almost every city. You will have a hard time winning with beans. That being said, I LOVE BEANS in my chili. Also, I hate to brake it to y’all, but the only thing chili should be served with is cornbread.

discinque ahhh! Cincinnati Chili! One of my favs! I feel late to the game; only discovering this gem about 10 years ago. I do put cinnamon and ... shh (don’t tell anyone)... chocolate... in my chilis. But, you do raise a point: when is chili “chili” and not just a sauce. The first time I made Cincinnati chili I thought, “that much cinnamon... on pasta?!” It was awesome! I wish more people were more adventurous...

My version is, interestingly, a combo of J and Ebbers. I use the fresh spices/chilies and ground beef or sometimes venison or bison. Beer, definitely. I just cook it longer than J and serve with cotija cheese and corn tortilla chips. My mom is from NM and I lived there for years. Better yet, make Ben's version and plate it as stacked enchiladas. A fried corn tortilla, chili, grated cheese, shredded lettuce and diced tomato, or pico de gallo if desired. Delicious, classic Tex-mex at it's best.

The Shin one has the same stuff as mine recipe that i put in my Instant Pot with black dried beans, for more flavor i add; -two teaspoons of molasses, 1-2 tablespoons of a quality bbq sauce with good smoke flavor -half tablespoon of maple sirup -Aardvark hotsauce the red one 1-3 teaspoons, you can't make that sauce for the effort it takes to make -Lemon juice enough to balance the sweet so you get the sweet sour balance adjust the beer/water for the Instant Pot, and hit 30-35 minutes of cooking, the time plus preheating gives you the shin version within an hour with dried beans and better flavor then slow cooked...

I love me some Chilli Con Carne. I like Barry's version, it's somewhere in the middle, but I tend to make Jamies version most of the time. Could you guys make a steak and kidney pudding, I've always wanted to make one and they are the best for winter.

Agreed. My favorite chili is Sorteds Big Night In chili they made back when it was for Tastemade. I make Jamie's chili during a weeknight. I do simmer it an hour with some extra water tho. And i add the beans the last 15 minutes or so. Try the Big Night In one! Its a Texan chili and it is absolutely amazing.

When I saw Jamie pull out the sweet potato..I thought awesome that is how we like it....Then he made a root mash.. Cubed oven roasted Sweet Potato turned into the chili is one of the ways we love to make it. You should try it. Toasted chunks of Sweet Potatoes in the chili is a game changer. Also we use a 10 oz can of Rotel brand of Diced Tomatoes. Gives it a great kick.

Instead of mashing the butternut squash, my wife and I just add it diced into the chili instead of beans. Makes for less gas afterwards, keeps the texture of the chili interesting, and provides more nutrition than the beans would. The chocolate in Jamie's is a nice touch, veering into the mole lane with that one. Very nice. To control the salt more, we use Better Than Bullion stock base in my house. A refrigerated paste, it's super-concentrated real beef flavor, rather than a salt-heavy approximation. I highly recommend it. Nice move on Ben's part to go with with ancho and chipotle chilies. I am a bit surprised nobody went with fresh jalapenos, but maybe those are tougher to come by in the UK than they are here in the U.S.

Advice I got one time from a wise Texan I used to work with. If you don't like the bitterness of dark chocolate you can use white chocolate instead. It still smooths out the flavours but with none of the bitterness. Great work guys!

Sneaky tip: swap out the kidney beans for a tin of taco mixed beans. It comes in a spicy sauce so it already has the flavour all the way through the beans. It should mix in well with the other spices.

This has been my favorite episode in a while, mainly because I love chili. I'm really going to need to try that last one. I'd honestly love to see you guys go back to the 'Remake and Improve' series where you go back to some of your old recipes and try to improve them. I absolutely love seeing how things have changed, and I learn a lot from every one of them. I also wouldn't mind seeing a 3 Recipes Compared for steak sauces, as your Bearnaise sauce video from about a decade ago is one of my favorite things I've made after starting to cook for myself.

So just a question for the guys and people like me who love big flavours and dont like time consuming recipes, could you use Jamie's recipe but add the beer from Barry's and use the spice blend from Ben's to create the true ultimate chilli con carne in a rush?

Ben's spice blend might not come to its true flavour if you don't leave it to cook for hours. You could probably still get lots of flavour, but it might be a bit of a waste. No idea how expensive those things are though. Same with the beer, if you don't give it time, it might give off a strong bitter flavour that isn't mellowed out yet. And that's also why you add chocolate instead, you don't have the time to develop those flavours.

Telling you as an American who makes chili many times a year, you don't need to kill yourself to make it. It takes an hour and fifteen minutes at most if you're in a hurry. Americans are known for being in a hurry or being lazy. So, look at the Taste of Home website if you want something authentic but not overly spicy. Look at it every 👏 single 👏 time some British person tells you how to cook how to cook American. You can trust it for everything unless it's a southern dish or cold potato salad. But it tells you how average moms cook for their families. I live in Wisconsin. I don't tell people in England how to make black pudding.

My stepfather was from Texas, so had OPINIONS on chilli. He made unbelievable chili, but lost his recipes at an ex-boyfriend's house. (All of my family recipes). My stepfather used the dry peppers, put them in a pan of water, brought it to a boil, boiled them for some time, and then fished them out, let them cool, scraped the flesh from the skin (keep that chili pepper unfused water). He then browned coursly ground beef, added garlic, cumin, chili powder. No tomato products (only Yankees use tomatoes, he said). He made a pot of pinto beans added as you wished as you are. I don't know the other spices, or the amounts, I spent years guessing wrongly until I gave up.

Fun thing to do: Make up a double-sized batch of Jamie’s chili spice mixture, and keep it in a shaker or bowl next to the stove: Sprinkle it on the top of an omelette or scrambled eggs in the morning. Bonus if you have some ham in the same pan.

I've had chili con carne on its own. I've had it served with rice. The mash seems unusual, but I would try it.

Note: "chilli powder" in the UK is different from "chili powder" in North America. The UK version is basically ground chillis; ours is a combination of ancho chili powder, oregano, cumin, and garlic.

Not completely true. While many manufacturers do make a generic blend of chillis and spices in the US, some make a straight chili powder. So read the label for the ingredients. And some will state a type of chili powder like Ancho Chili powder.

@@Jemima1377 US 'chili powder' is not 'powdered chilis', but rather 'the spice you use to make chili con carne' (which we just call 'chili' 99 times out of 100). When I was a kid living in a northern state I didn't even know hot food existed - hot food hadn't become a thing all over the states yet - but mom made 'chili' for us sometimes. By my current standards I probably wouldn't even call it hot.

GrifterMage the seeds are where a majority of the heat in your chilies is. The seeds can also be really bitter if you’re grinding them up like that.

afaik the most heat is in the white stuff surrounding the seeds, not in the seeds itself, but the seeds are still hot though

PERSECUTE!!! PERSECUTE!!! ps: I quite often serve my chili w/rice as well, which does help with the heat and adds some fiber (because NO BEANS! ;) ), but still...CORNBREAD!!

This is only the second time I've ever seen chili served with rice, both European chefs cooking it. And he calls that classic? Chili con carne is classically served alone with toppings, typically shredded cheddar, onions and/or sour cream, or with a side of cornbread.

True. Chili is usually served alone. And if really authentic, the spoon can stand up in the bowl. LOL. I think, however, that Cincinnati Chili is served with rice. I could be wrong about that. Anyone from Cincinnati confirm?

These look great! Just a suggestion: to get the best flavour out of dry chillies, the best is to soak them in boiling water before using them or to toast them for just a few seconds!

You can pre-prepare your chili mix and then freeze it in ice cube trays. Toss cubes in freezer bag and you can store for several months. This gives you the deeper flavor profile that you can use at any time with significantly less preparation later on.

I've never heard any such strange thing. They need an American consultant. They put jalapenos in their meatloaf! American food is inclusive and weird but there's some things we don't do. They could have put elbow macaroni in it and parts of the USA would have defended them. They were just on Good Mythical Morning. They should run their American ideas past Josh.

Just a tip, but if you have a store nearby that imports Belgian beers I can highly recommend "Benedictus 12", "West-Malle dubbel" and "Leffe dark". These are some Belgian classics which are perfect for any beef stew. West-Malle and Leffe should be available world wide, Benedictus might be difficult to get.

I'd love to see an all-vegan 3 way dish episode. Sometimes you do a fast/normal/gourmet, sometimes a fast/vegan/gourmet, etc. Now what if you take a dish, preferably something that is traditionally vegan, or at least can be made vegan without any real compromise; all 3 ways should keep it vegan, but you have to find ways to make it surprisingly easy/fast on one end, and real gourmet on the other. Watching all these 3 way videos I'm sure you could do it, I just don't know the dish to do it with.

They're really not important. I live in the USA and no one here gives two sh*ts to use them even if the store nearby sells them. Use the same chili flakes you use in Italian dishes. The US is a melting pot, we aren't purists about food, except a few jerks. Use the spicy chili you have. Go for it.

The choice to add beans is a personal one, there is no wrong answer unless you're an elitist. Also, chili con carne has zero relation to Spain, it's a Tex-Mex dish.

Kinda surprised Ben is the only one who 'toasted' the tomato paste, it's easy enough and makes a decent difference even for quick chili. Those all looked pretty awesome though.

The one with shin. Chilli made with chunks of meat is incomparably better than making it with mince. Works well in the pressure cooker if you're impatient, too.
