Here are three flow/pressure profiles worth trying! I go over each of the profiles, show you the Decent profile (on visualizer), then I pull a demo shot and discuss. This video is more geared towards manual lever machine users but you can recreate these profiles on any pressure/flow profiling machine. I'll be revisiting in the future showing all of these profiles on the Decent but I thought it'd be fun to show you how to do them on a manual lever. Thanks, CJ for leaving a comment about this!

@lancehedrick is this blooming technique correct? I mean after he hit 5 bars he left hand from lever, and it seems like piston went up a little. Doesnt this corrupt the puck? I just assume, i am not sure how flair 58 works

Excellent presentation! I'm glad I now have names for these types of shots. On a Robot, I think a lot of us pull the Londonium shot as that's the closest to the recommendation of the creator. I've also been surprised in the past dialing in light roast that if I'm wildly too coarse and the shot shoots through, it's often more drinkable than a higher pressure (but still not dialed in) shot, as that's closer to the Rao. The blooming shot might be tough for the Robot as the piston is mechanically linked to the arms, and stopping pressure/lifting may cause negative pressure that disturbs the puck. But excellent work and love the channel.

Thanks Brian. I would love to hear more about the Ditting/commercial grinders at home for espresso and other brewing methods, single dosing etc. Its a great topic considering the cost/difficulty of getting most end game grinders.

Hi brain, I bought a flair 58 recently but I’m unable to pull good shots due to problems with grind size. Would it be possible if you could do a video and talk about what grind setting you normally use for your espresso recipes on the df64 or any other grinder. My df64 wasn’t aligned properly and I think because I need to go down to setting 3 in order to pull a decent shot and even then it channels. I’m using wdt and 18 grams aiming for 30 grams out. On my commandante red clix im down at setting 8-9 and are able to pull better shots but then again problems with channeling. So if you could do a video talking about grindsize and how to pull a good shot on the flair 58. I’ve heard that it takes some time to get a grip on it and different beans affect grind size as well. Love your videos! ☕️

With that new puck screen/funnel upgrade on the flair 58, I wonder if you could you do those extra long shots by refilling the chamber after the first pull down, pull up, and then just keep going

For the longer shots on the 58 what if we just add more hot water and pull again? We could actually do it 3 times. How would that differ from doing an extra long shot on the Nomad?

Those longer drinks are the usual coffee drink here in Switzerland,called Café crème cause they have some crema on top still. It's interesting how thing evolve, with 3rd wave it became expresso or filter, pushing these long shots out of sight, but now we figure out they are actually good and enjoyable for reasons you pointed out, it's not gone in one sip. Great take on this

It's quite interesting to see how traditional ratio shots have evolved over time. There are many specialty coffee shops in the USA that pull at low pressure and long (1:3)! I have been finding the longer ratio drinks to be my go to because of the lower intensity and clarity in the notes. I'll be putting a dedicated sprover video out.

When I saw this video pop up in my KZfaq notifications I got a huge smile on my face. Thanks for making a video solely based on my request. You're the man. Quick question on the dose. I tend to use a 15g dose when I go for longer ratios on my 58 because of the limited water capacity. What are your thoughts on dose for some of these profiles?

Hey, what grinder do you believe is the best one out there for an espresso lover without going into diminishing returns? Niche? Option-O P64? Odus? Varia? DF64?

on the londinium: how would you get 3 bar for preinfusion, when boiler pressure is around 1.3 to 1.5 bar? line pressure doesnt get to the group head, does ist? i use a quickmill achille and the pressure gage never shows more than what i have set the pressostat to…

With the sprover running at 1 bar or bellow, would it be possible to just use la Pavoni boiler pressure to get a super long shot? Especially on the professional you're not really limited in how much water you can pull at around 1 bar while your normal profiles are limited to around 40ml. The only issue I could see would be temperatures going insane when pulling like 200ml at a time. I'm going to give it a try once I open my lighter roast bag since I don't think my Italian blend is going to taste that great with a shot like that. Has anyone tried this before?

Spro-over is like richer Filter coffee. Americano is dilute espresso.

mostly can’t reach 9 bars on my 58s. grinder is df64 at 8 clicks, beans medium roast. what could go wrong with my shots.

The 58 requires super fine grinding due to the higher flow basket. Have you tried grinding finer? If you aren't able to dial that basket I'd try the low flow basket with the 58!

Have you tried with BLACK CAT Intelligentsia blend? I have found that coffee to be tough to dial using the 58 and a JMAX.

Hey Daniel, I haven't tried it on a Flair 58. What I'd suggest is you try replicating what I did in video on ristrettos. With dark roast coffees try pulling shorter!

Black cat espresso is one of my favorites. I recommend doing the 3 bar pre-infusion and then ramping to 7-8 Bars and maintaining force as the pressure gradually goes down, I’ve been able to extract that marshmallow note a couple times perfectly and it is so satisfying. I’m going to try the other two profiles on this video soon(also I aim for 1-2/ 1-2.5 water to coffee ratio)

We typically extract BCC 1:2.3-1:2.4. Going shorter will certainly lead to under extraction and sourness. It’s actually not a dark coffee.

Brian - knowing you have both a Flair 58 and a DE1, does the Flair 58 portafilter work in the DE1?

Hey Louis mine fits. It's that straight style E61 PF and it'll lock in on the DE1!

With a machine that has flow control I noticed if I grind too coarse there's no way to really get to nine bars. It will be like 4 or 6 Max depending on how of coarse the grind was. I assume it would be the same for a flaire or other lever machines. How do you generate more pressure if the coffee is not creating enough resistance ?

Hey Ben, Sounds like you need to grind finer or adjust your preinfusion time? Depending on coffee and grinder you may not need to utilize flowcontrol/longer preinfusion times.

blooming method for light roast, should i start with higher temperature? Like 98c? As blooming takes time and the water cools down quite fast.

Yes my first 58 pull that reminded me of my rocket only better did the bloom pull with PTs Roasteries (Topeka ks) Southpaw espresso, no more of those hard quick pulls just so I can say look at the puck - your vid is great more please and I wanna get that nomad now for camping 🏕
