3 Michelin stars restaurant at Hotel de Ville (Crissier, Switzerland) is one of the very few 3 Michelin stars restaurants in Switzerland. Frank Giovannini not only cooks for guests but also provides a cooking class for a culinary maniacs.
Frank Giovannini, is a 3 Michelin stars chef, who cooks in very interesting and sophisticated way. Every plate is a lot of work.
In 2015, “La Liste” published a list of the world’s best restaurants. The Restaurant de l’Hôtel de Ville, in Crissier, near Lausanne, in Switzerland, was woted number 1 restaurant in the world. Now it's in 5th place.
Chef Giovannini doesn't go for compromise - he is a perfectionist, control freak and real food aficionado. He loves good food. And he loves to share: everyone can come to the kitchen and cook with mr Giovannini. That’s what are culinary courses were made for.

Beautiful video. All the dishes looked great and it's good seeing some restaurants taking it further in your dining experience. And thank you for the subtitles. Guess I should just subscribe and wait for the new videos.

How is this a cooking class if the mise en place is already done and all there to do is just plate.

3 michelin star cooking is not a practical method that you would want to apply on your everyday cooking. It takes too much time, and most of the effort is focused on the visual aspect. In terms of taste someone can have much better courses of a more homemade cooking style.

When I entertain I'll typically pick 1 course to try something fancy / experimental. It's not something I'll do often but I live 20 minutes from Borough market in London, and am blessed with some incredible ingredients. I equate it to picking up my wife, like sure she's more than just her looks, but her looks is what I noticed first and made me wow. It's the same with cooking and eating. My last time I picked the starter where I did gooseberry jam with flaked mackerel on top in a circular ring, with a fennel, radish and beetroot roasted combo in a rectangle, and then I had an elder flower reduction spread underneath on the plate. Sure, it took like 90 minutes to make 4 courses, but the curry basically cooked itself. The time before then I did a rabbit main on a fancy cos cos, fondant turnip with a plum puree and a tomato sauce. I am still in the process of refining this dish, and have since done again but less fancy, with roasted and pureed apricot, as well as dried apricot with the other things in the cos cos. Eventually I imagine I will take it back further and keep it mostly the rabbit and apricot, which is a delicious combo, and then I'll make it all fancy on a plate. Randomly I was out with the couple we hosted and the chap was raving about to all his friends, 9 months later, saying it had given him a new appreciate for food as before he was largely utilitarian about eating. That makes it worth the effort, about 3 hours for this dish in total, for 6 courses.

i disagree. visual aspect goes hand to hand with the way the chef wants you to eat and experience the food. the right plate, the right visual can determine way more that what is a "visual thing". And no, the cooking part is not the part that will take more time. preparing the sauces, and the preparation and selection of ingredients take much more time by far.

As a cook this would be annoying during service but if it's on A Tues _ Thurs maybe.keep in mind they are learning to cook not work in the restaurant.

Not in this case. In fact his name is usually spelled Franck and he is providing the class, not teaching it.

Un autre monde , et des moyens extraordinaires , un milliardaire qui remet du pognon tout les ans . Service, cours de cuisine, mise en place en même temps . On fait pas le même métier. Je suis cuisinier depuis 35 ans . Moi je veux les voir tout seuls en cuisine , mise en place , plonge , cuisine , . Je rigole déjà

Nothing special, the taste is horrible..homecook better than this...the effort to this cuisine is on the dressing
