2 avocados
Handful of fresh coriander, finely chopped
Handful of fresh chives, finely chopped
Handful of spinach, finely chopped
Squeeze fresh lemon juice
1 x 400g can white beans
Salt to taste
1 clove of garlic, minced
Handful of mushrooms
1 tsp paprika
Salt to taste

Chickpea flour
1 tsp baking powder
Squeeze of fresh lemon juice
2 tomatoes
1 red pepper
1/2 courgette
1 red onion
Handful of fresh coriander
Handful of fresh parsley
Salt to taste
Handful of mushrooms
1 tsp soy sauce
1 red chilli

I became vegan aged 16 I'm now 66 years young. Way back made my own bread nut butters and almond milk. Blackstrap molasses and brewers yeast my go to for iron and vitamin B. Lentils and a pressure cooker for all the different beans used. Had 6 children all still vegan and very healthy my eldest is 47. I've a great granddaughter and 3 grandchildren. All healthy and vegan all through the generations breastfed of course. Soya milk was given if needed. Being vegan is easy and cooking vegan is second nature to me❤💛💚

These meals can be prepped before hand. When I cook meals like this I cook for 4 to 5 days so I am not cooking like this every day.

Same same. I'm looking for some filling breakfast ideas for the kiddo and these look awesome, but there's no way I'm getting up at 6 to do all that. :P That being said, I think the bean and herbs mixture could be made in advance. All that would be left in the morning is add the avocados to the mixture and cook the mushrooms, which isn't too bad.

Fun fact..if you cook them in balsamic vin you get the opposite effect and they become thick , juicy and delicious!

A mushroom will not dissolve during cooking. It may shrink. If you drop certain tablets in water, they dissolve.

Chickpea scramble tip… (if you like eggs) add a teaspoon of black salt (aka Kala Namak) to them once they’re cooked. It’s a sulphurous salt so naturally has an eggy flavour and smell! It actually makes your chickpea scramble taste like eggs! I also add vegan butter and a bit of unsweetened soya milk to the mashed chickpeas and they go even more scrambled egg like… I.e. a bit more smooth and silky. Add the black salt at the end as the flavour does start to wane with the heat and also bear in mind you won’t need to add normal salt to the eggs too

3:28 - avocado toast with mushrooms, beans, and tomatoes 9:18 - herb and veggie frittata with chickpeas substituting eggs 13:35 - buttered toast with spinach, caramelized onions, and curry chickpeas (with coriander and chili pepper and lemon juice)

Just wanted to let you know. I have IBS and I am gluten intolerant. I have started eating sourdough bread and it is wonderful. Not only does it not irritate my gut it seems to help my IBS symptoms. You might try A small slice and see what you think.

Today i tried the first recipe. It was delicious. I used baby spinach, coriander, parsley and added a half a teaspoon of chilie flakes.... Thank you so much Rachel. I enjoyed my breakfast.

I just made that avocado/bean toast for breakfast using gluten-free bread (since I have medical issues with wheat). It was the best breakfast I've had in a while. So delicious.

Top tip too for with onions, mushrooms and little garnishes.. Meal prep them. You don't have to meal prep every single meal for the week. The amount of difference making a quick red onion pickle, some fried mushrooms you can toss in the microwave or back in the pan and even the avo mix can save much valued tired time on an early work morning. I can't believe how tasty all of these look and can't wait to try them it's really reinvigorated my health kick whilst reminding me that healthy just means getting all the nutrients you need and isn't just small portions.

Tip for avocado mix if you're gonna do it in advance is *GENTLY* pour a thin layer of water over the top once you've got it in your storage container. Water will block out most oxygen from getting to the avocado mash which would oxidize it and turn it brown and yucky looking. Works for guacamole too. Putting the pit in does NOT work from my personal experience, it's just hearsay.

Hi there, Regarding the whole protein concern for vegans is exaggerated from gathered information especially that there are 'high protein' plant food sources e.g nuts and legumes; People showing signs of deficiencies e.g those showing signs of anorexia, actually need plant food sources such as starchy carbohydrates that help with weight gain than protein. I highly encourage being a sceptic, research things for yourself, and you will find out that the diet i will share with you is actually for your own good (even if it means making small changes here and there) e.g processed meats are classified as carcinogenic to humans in Group 1, which is as bad as it can get, where as plant foods are classified as anti-cancer foods. A well-planned, organic, unrefined and untempered with vegan diet (consuming raw plant foods where possible so as not to denature or destroy the life-forces and enzymatic activities beneficial to the human system. If disagreeing on this matter, please take some steamed carrots, plant them and see if they will grow; if not, it is because they are 'dead' plant food that cannot benefit one's 'living' cells) consisting of organic fruits, vegetables, legumes, nuts, seeds and whole grains is the best diet to provide mankind with ultimate health and longevity. I do not even see a reason to use pharmaceutical supplements e.g Vitamin D is obtainable from organic chestnut mushrooms (UV exposed) and sun-dried mushrooms with the exception of the body's ability to make it (and store it for future use) when exposed to the sun; Zinc from organic cashew nuts; potassium and magnesium from organic bananas; Omega 3 Fatty Acids (beneficial for the brain) from organic walnuts and pecans (looks like the brain and targets it). Please avoid factory produced meat alternatives whose chief ingredient can be 'soy' and may contain preservatives as well as additives (e.g Vinegar, a corrosive agent). Food toxicity and nutrient deficiency (e.g white bread, white rice and white sugar) are a deadly combination as one is hindering the body's building materials needed to action healing whilst at the same time taxing the system with more toxic stuff, thus bringing about disease and possibly even an early death. I started by going 2/3’s (2 out of 3 meals a day) vegetarian then switching to vegan from there. At first it was a lot of oatmeal for breakfast and beans on salad for lunch, but 3 years later I’m WAY more creative and it’s a lot of fun! Hope this might help you!

I am gujarati. We are basically from the state Gujarat in India and we are mostly vegetarian. We make the exact second dish you made but we call it pudla and make it like pancakes. Pretty tasty, healthy and filling. Loved your toast recipe as well.. ❤️

As a vegan some of the best ideas are in indian cuisine. The fritata is called chilla. The chickpea mix is similar to a snack we do during religious fasting. The subtle changes in the original recipes is absolutely brilliant. Love it.

It may not be doable for everyone…but the one way I’ve kept from wasting so much food is instead of meal planning for a whole week I meal plan for about 3 days at a time. The reason I do this is sometimes you have unexpected left overs (like when you didn’t expect to get so much food out of a new dish) so if i planned meals for a whole week I would have a lot of food waste at the end. This means I usually go grocery shopping about 2 times a week instead of the standard 1 a week big grocery hall most ppl I know do. Without writing down what I will make for breakfast, lunch, and dinner tho…I find I buy a lot of random ingredients which when I get home I’m like “how am I going to make a meal out of this?” And so produce will go to waste more easily then. Also! If you can…start a compost pile, if produce spoils quicker then you expected at least it won’t be all bad because you can use it in your compost :)

The crazy thing is that if I cook; I'll eat everything until it's finished. It's such a bad habit....but it's just staring at me. I'm a binge/starve kinda person. As I grow older, it's 'easier' to gain weight but still easy to drop it by eating like a rabbit.

I am 100% a savoury-brekkie person so this video is just awesome for getting some extra inspiration! I love how flavour-packed and warried in texture these recipes were! I kind of don't agree these are high protein BUT it does not take away their deliciousness! They were surely very satisfying for the body and the soul! . Thank you very much for these recipes! I thought they were high protein because of a) white beans in the first recipe b) garam flour (chickpea flour) in the fritatta c) the chickpeas in the third recipe. There's lots of protein naturally in beans

I'm a vegetarian but you Rachel have inspired me to cook much more vegan food. You make it so simple, approachable, tasty and interesting (and plantain-centric, I love plantain). And I've learned so much more about cooking from the tips that you drop into every vid! Thank you!!!

Love this.💕 I would probably eat it for lunch though, because I start the day with fresh juices and a fruit and green smoothie. It would also be a quick dinner! So glad I ran across this channel, and can’t wait to see more.

@@sofiaxcosmo894 I just kinda wing it. Mushrooms, onions, spinach or asparagus with Italian spices, garlic and veggie broth and/or unsweetened oat milk is a great place to start.
