We challenged chefs of three different skill levels - amateur Emily, home cook Rinku, and executive chef Ayesha Nurdjaja of Shuka Restaurant in New York City - to toast us up their favorite flatbread recipe. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert's perspective. Which flatbread are you reaching for first?

To all of y'all here who think indian flatbreads are all about naan then let me enlighten you that naan is only eaten as a delicate bread, rarely in our homes. We make our own flatbread from scratch every single day and it's called roti or chappati. All of us indian women know know to cook our rotis. Next is naan belongs only to Punjab which us a small province in India though it's food has made itself known around the world for it's rich taste and availability.

Yh im lebanese so it's nice but the way she pronounced it tho😂 "Lak majoun" idk how u guys pronounce it but here it's lahm baajin (لحمة بعجين) for those who don't know lahm is meat and aajin is dough and the way she did it was a bit different but that's okay

We come to the point where - The level 1 makes her own dough. - The level 2 makes the most complicated dish. - And the level 3 dish is actually reasonable.

Have been LOVING all the diversity to the dishes, lately. Instead of just elevating American style cooking with more expensive ingredients, we're finally acknowledging other cultural cooking practices and showing how much more depth and flavor can be imparted by incorporating other spices and techniques. My heart is so happy!

I’m from the Middle East and as far as I’m concerned, traditionally speaking the dough used for Lahm B’aajin (level 3) is made without any dairy, just water, wheat flour, yeast, sugar, and optionally oil. I now get why Italians get frustrated over recipes that are replicated inaccurately.

@@namankataria4142 I think she is POI- person of Indian origin, not necessarily born in India regardless of whether they have kept citizenship, like Non-resident Indians. The terms have become confusing though so I probably need to see what the consensus is online. Probably should've done that before I answered lol.

Aisha sounds like a lot of people I grew up with around NJ/ NY boroughs/ Long Island/ parts of Westchester. I love her confident movements and speech and I wish I had more levantine food like this around me, because i have wanted to try it forever. Love Emily's humor, sass, relatability and seeing how she has improved. I like the look of that pizza bianca And of course Auntie Rinku representing with those tasty paratha. I rarely got paratha my house because we have to watch our fat intake, so it was mostly chapati for us.

Parathas are so good, but they're not exactly what we normally think of as "flatbread" in America. It would've be cool to have a 4 levels episode specifically focusing on parathas! Actually the same thing could be said for the dish that the level 3 chef made in this video as well. These all look really good though!

lahmacun is also very popular in turkey, I love how this level three is just perfecting classical recipes from the middle east instead of adding truffles and caviar to everything...

The original name for the dish is pronounced with a letter that most western people cannot pronounce. I can't even describe how it sounds, you can look it up on Google: ح / حرف الحاء So when the recipe's passed on, its naming changes according to the chef's mother tongue. For example, based on personal notice, Russians pronounce it "Kh". Americans go for "H". Most Asians would go for "K". Only the Chinese managed to get it right from the very beginning. So basically, level 3 chef is not entirely wrong.

Okay 1 minute in the video and gotta give the professional chef credit for crediting us Levantines and I can already tell her Lahmajoun is legitimately authentic by the looks of it and how crispy the sides are. Y'all need to try this goodness. Been craving it for a year and a half. Wanted to make it for last year's NYE but couldn't afford buying meat (thank you Syrian civil war). But this year I've started working this past month excessively in order to save up some cash and get myself some good one kilo of meat. I'll be eating lahmajoun this NYE y'all! Try it, you'll love it!

okay video's done and i confirm, her recipe is legit. so was her plating. generously sprinkling chopped parsley and a squeeze of lemon, is the way to go. only needed a drizzle of pomegranate molasses with the lamb spice mix, but otherwise it's perfection. i'll be making this. and chef Ayesha is such a professional strict-looking yet kind person. I'd like her be my instructor, I feel like I can trust her with my life.

As someone who's from the Middle East, I can easily say that level 3 chef absolutely nailed it. The only problem is just how the dish's name was butchered.
