Vegan? Alergic to eggs? Think raw eggs are gross? This episode is for you! Today I will be exploring egg white alternatives by making 5 whiskey sours using different egg white substitutes.
Whiskey Sour:
1 oz. or 30 ml. egg white
1 oz. or 30 ml. simple syrup
1 oz. or 30 ml. lemon juice
2 oz. or 60 ml. Whiskey (Used early times for this experiment)
Dry shake
Add ice and shake again
Egg white substitutes:
Bar-Tender's Instant whiskey Sour Mix:
1 pakcet of whiskey sour mix
2 oz. or 60 ml. Whiskey
Fee Brothers Fee Foam Cocktail Foamer:
1 oz. or 30 ml. simple syrup
1 oz. or 30 ml. lemon juice
2 oz. or 60 ml. Whiskey
2-3 dashes of Fee foam
Frothee Creamy Head for Cocktails:
1 oz. or 30 ml. simple syrup
1 oz. or 30 ml. lemon juice
2 oz. or 60 ml. Whiskey
2-3 dashes of Frothee
Bob's Red Mill Egg Replacer:
1 oz. or 30 ml. simple syrup
1 oz. or 30 ml. lemon juice
2 oz. or 60 ml. Whiskey
1.5 tsp or replacer
Aquafaba Juice (Garbanzo bean juice)
1 oz. or 30 ml. Aquafaba
1 oz. or 30 ml. simple syrup
1 oz. or 30 ml. lemon juice
2 oz. or 60 ml. Whiskey

Ok so I worked at a bar where we used Aquafaba. You only use a 1/4 oz of it in the drink taste won’t be there and it will foam well. Basically you used way too much of the stuff.

Have you tried human egg whites instead of chicken egg whites. It makes all the difference in the taste of the drink. Platypus egg whites are good too 🤣

The best froth I've had in any drink is always from using cheap dole canned pineapple juice. Shake that stuff and it gets crazy thick. But if you're using that might as well make it a rum sour, and if you're doing that you might as well use lime instead of lemon, and if you're doing that add some compari because you've come this far. Oops this is a jungle bird now.

you can also roast the garbanzo beans to make a slightly crispy snack. Dress them with some spices and they're not bad at all

I'll always stick to the egg white, but i've been using aquafaba for the last while for vegan friends. I find leaving the aquafaba to sit in a bowl (sans beans) for 10-15 minutes prior to use helps with the smell/taste of it in the finished cocktail. Barely notice it. On a side note, not all cans are equal, i've found some perform way better than others, from crazy froth to non-existent damp squib. Here in NS (Maritimes) Superstore's Blue Menu brand is pretty consistent and decent.

when my gf and I started dating, she was vegan so I would make all my cocktails that called for an eggwhite with aquafaba, I could honestly never tell the difference, 10/10 would reccomend

The crazy thing is aquafaba (bean water) was only discovered in 2014 by a French musician and amateur food blogger

Eggs and blood show similar protein compositions, particularly with the albumen that gives both their coagulant properties. Based on these similarities, a substitution ratio of 65g of blood for one egg or 43g of blood for one egg white can be used.

Hey Greg. We sometimes use Aquafaba for sours at our events, and I find that it tastes better if you add a tiny bit of sugar and vanilla to the Aquafaba, and then use it as a cocktail ingredients. Seems to cover up any weird smell or taste, and works great in whiskey sours.

Oh man, your mention of NB pulp mills immediately brought me back to playing baseball on fields near the ocean -- as the fog rolled in at night it felt like being smothered by a wet dog. So gross but so tightly joined to my childhood memories of summer nights in NB haha. Oh, and a tip for anyone wanting to use aquafaba in your drinks, you can freeze it in ice cube trays and just shake your drink with aquafaba cubes and it works just as well.

Vegan, Home bartender here, I love using aquafaba for egg white cocktails. I was gonna recommend exactly what you did with adding bitters to totally remove any lingering can smell/taste. Another tip is to just drain and collect the aquafaba the day before and refrigerate it in a sealed container.

This is so weird, I was just thinking about how to make a vegan whiskey sour TODAY, about 8 hours before this video came out, and aquafaba was the first thing that came to mind. If you don't feel like racking up a load of wasted cans, some vegan/vegetarian/health food type shops sell aquafaba in a bottle. Thank you Greg!!

Idea for how to use the leftover chickpeas: pat them dry, cover them with olive oil and salt, and toss them in a 400-degree oven for 20-30 minutes. When they're finished roasting, toss them with some herbs and spices. Now you have a salty snack to enjoy while drinking your whiskey sour!

I tried aquafaba once, because I dont trust store-bought raw eggs. I had exactly the same experience that you had with the salted can. I failed to realize that there are salted cans, and that they are more common. I guess I have to try to find an unsalted can and try again, thanks for leaving in the "outtake".

You can avoid any kind of tin can taste on the chickpeas, and get way more aquafaba, if you get dried chickpeas and boil them yourself. Of course, it doesn't make a lot of sense if you don't eat a lot of chickpeas/hummus, but to me, it's a huge plus to be able to pull out a bottle of aquafaba, measure, and mix as needed, without having to break any eggs, deal with the yolks, or the wet dog smell!

This is excellent news! I soak a lot of my own dried garbonzo beans, and I've always just thrown the juice away because I haven't found it delicious to add to other food (as opposed to black bean water which is good), and meanwhile I've given up eggs, so I thought I would never drink a sour again. This is solving all my problems.

Thank you for this video, really interesting and I love the concept! Chick-peas make a really good aquafaba as well and with some good seasoning you can dryroast those in the oven for a perfect salty snack to have with your drinks

This was very useful! My wife loves Pisco Sours, but not made at home because she doesn't like to see the egg whites and all that. I did some research and found some powdered aquafaba specifically for drinks. We'll see how it turns out!

I make beans a lot in my crock pot and save the aquafaba in ice cube trays. In my tray it is 2 cubes=1 egg white. Comes in handy for baking and wherever egg replacing is needed.

I don't really like cooking channels or anything related to cooking(like making drinks) but for some reason I love this channel I don't know why.Maybe it's because you do video game drinks or you make it easy to understand and enjoyable or both (I think it's both) but good job with the video you did good. :)

because the aquafaba gives you more foam than the egg, you can also reduce the total volume used and cut back on the can flavor.

Gotta appreciate this man for pretty much being our bar tender, if you think about it it makes sense, we pay for the ingredients to make the drink (so we basically pay for the drink) he teaches us how to make the drink (so he basically makes it for us) he tells us his opinion on how it tastes (he gives us his professional opinion) and he serves the drink to us by actually making the final product allowing us to enjoy the drink.

Aquafaba works really great. To avoid the flavor issue, its better cook dry garbanzo beans and store the aquafaba. You can keep it refrigerated without issues.

If you want to get rid of the beans and don't want hummus you can deep fry them until they are cirspy and then season them for a nice garnish for a dish/salad or even just as a crispy salty snack

I use half an ounce rather than a full ounce and a single can will make around 25 drinks or so

“Cabbage fart” if you’re going to sneak in a funny quip on a drinking show it should come with a warning before it happens while sipping at my old fashioned. Because watching the show Sans a cocktail is pretty in appropriate. But as the old saying goes “what could go wrong w an old fashioned?” It coming out my nose, is the answer.
