You and this video need to emphasize on glycemic index. It is inappropriate to incriminate all carbohydrates or treat all sources of carbohydrates the same. Don't forget the adage in first-year medical school: "fat burns in the presence of carbohydrates." It is ok to eat wheat-based products. The bottomline is to limit the total caloric intake to 1500 to 1800 Cal QD depending on one's baseline weight, plus exercise. A well balanced diet avoiding simple sweets or the Mediterranean diet would do. Avoiding carbohydrates altogether would lead one to a ketogenic diet, placing undue burden on the kidneys, and kidney damage is also a common complication in diabetes mellitus.
