you can also drop a little glob of the hot sugar goo into a cup of cold water and see if it is at the soft ball, hard ball, soft crack or hard crack stage. Nut brittles usually cook to the hard crack stage. But the baking soda aereates it and makes it not like rock candy.

Part of your issue with the chocolate is that you have to stir like hell while the ⅓ part is melting. It helps with the crystallizing. Stella Parks did a post on this at Serious Eats,

You could cover them with dark chocolate on the honeycomb candy and make Violet Crumble. Yuuuummmmmy!

Thank you for pointing out the danger of hot melted sugar! I once made the mistake of putting my finger in as a kid, it hurts like hell. I was really lucky that I was right next to the sink and immediately ran cold water over it, and that I had only put the finger in a little bit. The candy recipes look amazing, I love rocky road. ♥️😋 Candied pomelo peel is also amazing, give it a try.

Oh, thank you. My favorite store quit carrying their pumpkin seed brittle. They add pumpkin pie spice before the press. Can’t wait to make!!

I used to make bark in silicon Heart muffin baking vessels. So they came out Heart shaped. And then I'd wrap them in aluminum foil. I have bought my prescooler bear shaped muffin vessels..might use those this year!!

I think you are the only chef I have heard of candying their own Buddha’s Hand Citron, but I don’t think we have those where I live. The visual tutorial was really wonderful on the citron, you are both imaginative and pleasant to lsten to, thank you, Chef John!

If you do not have a candy thermometer, you can use a water test. Put cool water in a bowl, big enough to fit you hand in, drop a bit of the hot candy into the water in bowl, wait a min a then retrieve your candy from water, if it dissolved or is soft, for a hard candy, cook longer until candy dropped in water is hard and brittle.

Yum Yum....... thank you for this video Chef John..... actually the Peach Gelee you showed here, actually looks some what similar to how my mum makes something similar to this Peach Gelee..... but we call it "Guava Cheese" because of the smooth texture of this candy...... and we always make it for Christmas and my favourite job in making this is to scoop out all the seeds from the Guavas..... but first my mum cuts the guavas in half and then boils them till they are all cooked and when they all are cooked my mum Bellows "Rebecca, Come and De-seed (a.k.a: remove all the seeds) the Guavas" and if i fail to do this on time, my dad or my mum, herself, will do the work..... and i am always the one who ends up being pretty grumpy if someone else does the de-seeding of the Guavas job....... so i always do it without fail..........anyway, after all the Guavas are de-seeded, my mum just puts the halves in a blender and makes a puree and then she uses the same technique as you showed in making the Peach Gelee...... but we don't add pectin in our Guava Gelee (or as we in India call it "Guava Cheese") and it's very yum.....but well, both my parents are diabetics and i actually don't eat too much sweets, myself, because 1) Indian sweets are WAY TOO SWEET even for this Indian..... and 2) My dad and mum can't have anything sweet anyway, and as the only person in the family (since my elder brother lives in the U.S with his wife and their little Munchkin- for- a- daughter, who is just 4 years old now..... 28th Oct is her birthday, so she just had her birthday), i just can't eat all that sugar stuff because i don't want to have health issues, plus diabetes is actually hereditary in my dad's side of the family...... and 3) i am more of the "Extremely Sour" candy kind of person.......... so yeah, the only exception is Chocolates....... and also i asked my mum if we can cut down on the sugar in this Gelee recipe because my mum puts equal amounts of Sugar to equal amounts of Guava Pulp (or puree) ........ and actually that is the only sweet stuff my mum says is hard to cut sugar out of....... but she cuts the amount of sugar used in making cakes, and other traditional Christmas sweets my family makes........ i actually have eaten my aunt's stuff and i actually do find those a bit too sweet for my taste and also some of the items are a bit too hard to bite on.....

In the Pacific Northwest, we call the honeycomb (2nd candy) Seafoam and cover it with chocolate.

I never heard it called Seafoam, but Cadbury does make a chocolate bar called 'Crunchie' that I used to buy until I figured out how to make it myself. It really is better with a coating of chocolate. Yum.

Yes, either dark or milk chocolate, yum. My kids and I love it, but it's very expensive, so we only get it once a year. Who knew that it's so easy and cheap to make?! Guess what they're all getting in their stockings this year!

You mean it's not break a tooth brittle? 😂 My mom spilled hot brittle on her arm when she lost her grip on the pan while transferring it onto a cookie sheet. It was horribly painful, and seared that lesson into mind forever.

Brittle releases easily from tin foil. Don’t try to make it when it’s humid outside. It won’t harden.

OMG, I've been obsessed with Honeycomb candy ever since I made butterfingers from scratch. You cannot find it at any confectioners, I have tried and visited many. I'll try this recipe and yes, I'm dipping said confection in chocolate!

I make peanut brittle & chocolate~mint fudge at Christmas time & I always say the peanut brittle is easier to make then the fudge!!

May I ask, how long do they keep. I’m thinking of making those and sending some to a friend that lives abroad. It will take at least a week to reach her. Will it spoil?

I’m not sure exactly how long brittle will keep, but I do know it needs to be kept in a tightly sealed container, such as glass or metal.

@@dvkaw7780 I have vacuum-sealed all kinds of things, in heat-sealed bags with air removed, to send to others and it works well in keeping moisture out and items fresher. If you don't have a sealer, I have also used small snack or sandwich baggies with as much air taken out as possible. It is a good thing to invest in since I seal items for the freezer, and pantry storage, or have portions ready for lunch bags.

re: the torrone method, adding the egg whites to the syrup is safer than trying to tilt a pan of molten lava into a bowl of beaten egg whites while whisking.

Anybody know if certain fruits won’t work in the glee? I know strawberries and pineapples don’t work in jello, so I wonder whether they will work in this.

I think any fruit would work. Some fruits, like berries, will need to have the seeds strained. Cooking length and pectin May need to be adjusted.

I can't tell if Chef John reassuring people about corn syrup vs high-fructose corn syrup directly after adding white sugar is a running joke or not. Hfcs and sugar are the same levels of unhealthy, it's just the primary sweetener for the majority of unhealthy foods and drinks in the US, which of course would cause it to be the main cause of sweetener-related health issues. Replace it with sugar and the results would be the same.

I have a question. Can you use the pumpkin seeds from the store that are white and salted? I don't like the green seeds, but I love the other kind. Also, thank you so much for that first recipe. I am allergic to all nuts, but I can eat seeds.

@@necrojoe I looked it up. Yes but no. The white ones have a green interior, but the green ones sold by themselves (the ones I don't like) come from a different type/variety of pumpkin. They taste different. The green ones have a much stronger and bitter taste. I had wondered what the difference was between them. Thanks for asking.

That honeycomb stuff always comes out gross… even if I use 1/8th the amount, I get the same amount of bubbles and a disgusting bicarbonate flavor.

I always have, but I live in a TINY community and used to put a label sticker with the candy name and my phone# on peanut brittle that I handed out. Everyone knows everyone here though and the kids can see who put the brittle in their bag. Otherwise, I wouldn't do it in a larger location as it would just get thrown out. Great for the household or your own visitors though.
