Lovely Betta shares her recipe for tagliatelle with a meat sauce. Meat - carne in Italian - means a mixture of beef and pork, rather than chicken or rabbit. This is her mother's recipe and it was served on special occasions.
Her recipe ingredients are: 300g 00 flour and 3 eggs for the pasta. For the ragù: half an onion, carrot and celery. 200g unsmoked pancetta (pork belly) and 400g minced beef, one glass red wine, 400ml tomato passata, salt. Parmigiano cheese is optional for serving.

That is true. People in the us would frown upon large powerful italian families in my area. To tell you the truth they would give you the shirt off your back (and much more that is deemed not legal) by showing them respect and working hard. Noone went hungry. One in my area still operates a bread company that employs many locals. I am grateful. And the bread is out of this world. Good people. 💪🤝🌄

Betta was born in 1935 and was a small child during WWII. No wonder they were poor, but hearty survivors. It’s glorious to see she lived to have an easier life. Thank you for sharing her story

I made homemade pasta yesterday for the first time ever. The house was quiet so the only thing I could hear was the Pasta Grannies theme song playing in my head. Even though I used an electric machine, their simple ways were a big encouragement to try making it for myself. The result was fantastic and very gratifing. Thanks everyone!

Congratulations! Your first homemade pasta gives you a great feeling of satisfaction doesn't it. I know I was very proud of myself & you should be too. It does become a bit addictive though, making more complicated shapes, longer, more even noodles, filled pastas, different colours or even just the skin soft texture of the first batch of dough made with proper '00' flour. Hope you continue to enjoy the journey.

It's a huge and wonderful rabbithole you may be entering, even a simple fresh egg pasta for a lasagne elevates the dish and gives such a sense of achievement for something so easy. I started with egg pasta and currently making malloreddus (Sardinian Gnocchetti) while sipping mirto and learning Italian. Enjoy!

A pleasure to watch. There seems to be a "universal" language/presence emanating from these Grannies/Nonnas. Even though your own grandmother may have been very different looking, spoken a different language & given you different food. They all seem to exude that air of comfort & happiness; plus you just know the food is going to be tasty & a hug on a plate.

this channel is a beautiful ode to european eating culture as well as italian. it is also possibly recording last people who lived a full life before the internet and all the changes it brought including take out food. it reminds me of my family, my grandma and all the european countries who have grandmas and grandpas just like these.

See back in her day they didn't use a lot of meat, it was money they didn't have. It doesn't need cheese because it was probably money they didn't have. It really is about the pasta and the tomatoes and other vegetables they grew. My parents grew up the same way in the depression. It makes me feel spoiled that we can go to the market and just buy anything we want. There's a lot to learn from these wonderful people.

Absolutely. My Mom told me that during the depression she & her brother would take his 'rosebud' cart to the food pantry (they lived in the city) & pile up on potatoes. Her Mom made everything with potatoes: gruel for breakfast, pancakes for lunch & dinner, & lots of bread (also potato-based cakes). My Dad's Mom grew up in farm country. They had a boarding house. On their little lot of land, they grew fruits & vegetables. My Great Grandfather was the town's butcher so they had all sorts of livestock. One of my in-law family members told me that my Great Grandfather once said, "I'm not a rich man but I can always make sure my married daughters & their families have food to eat". He used to bring them all leftover/unsold meats, chickens, & veggies, & place everything in layers (with rock salt) in their drop boxes. That would keep them for the winter months. What A Life!

As someone who loves Italian food but does NOT like cheese, I was thrilled to hear her say at the end that the dish doesn’t need cheese! Everyone in America thinks that Italian food HAS to have cheese all the time. Simply not true. Nice to have some proof.

This looks wonderful. I'm going to make it as soon as I get some pancetta. I can't believe Nonna Betta bicycle rides at 87 years old. I had to stop riding in my twenties because I have terrible arthritis in my knees. G-D Bless Her & all the Pasta Grannies.

That's one serious knife Betta has ! With cycling and cooking this way, she's got her exercise regimen for a healthy living nicely figured out. Wish I could keep some chicken for some lovely fresh eggs like those! I miss my childhood when we used to have them so abundantly and had to give most of them away and some got double yolks too! Vicky, good to see that you are fluent in Italian now; that poking your cheek for "delicious" ...buono :) I would have given her a nice fat saucy kiss on her cheek ....but it does look really delicious with that nice home made tomato sauce !!

These lovely Italian pasta grannies look exactly like my Greek pasta Granny who also rolls her own pasta in her kitchen. Its also very comon for Greek grannies to roll their own pasta aswell, as their pastries for pretzels,pies and bread and filo pastry for deserts.. They even sound similar."Una fatsa una Ratsa"🎉❤

I could watch her work all day. Her hands are graceful yet powerful as she is working the pasta … it is a thing of beauty. I love that you are filming these lovely people so we never lose their techniques and recipes. Thank you for bringing these wonderful people, their skills & gorgeous recipes to all of us. I truly appreciate the videos. I’ve learned & been fascinated a great deal by the grannies and grampies. Last thing, Betta’s pasta knife is so cool & her table that holds her pasta board is a dream. Is that a common item in Italian kitchens? I don’t even make enough pasta to warrant having one but secretly want one! I see why you filmed her again, she is just that interesting! ❤❤❤

Ms. Vicky, another winner recipe & Ms. Betta is a sweet heart as the same of all the pastgrannies. We do have a similar recipe in Appalachia but is usually made with ground wild rabbit/veggies, it is called vittles( rhymes with little) the pasta is similar to ours, & in regards to her 50 year old knife, that is also a tradition here as kitchen items are passed through generations, I have 4 cast iron cookware skillets that are at least 4 generations old & will be passed down when I'm gone as they have been well seasoned & cared for throughout generations, our ragu would be called meat sauce, God Bless everyone

I thought the pasta board was a spianatoia and taglieri was a chopping board? This could mean I’ve been getting them wrong since 1976. As always a fantastic watch and I always appreciate how 'honest' and simple the food is where the ingredients speak for themselves. All Italians, of all backgrounds, seem to have such finely tuned palates compared to other nations.

It’s nice to see grannies making authentic Italian recipes like it’s supposed to be made. So many recipes from foreign cultures, namely Mexican and Italian food, have been changed, distorted, and screwed up by Americans who have the audacity to say it’s authentic. That’s how so many Americans end up thinking that ground beef tacos are Mexican food.
