Here's my BLT Manifesto: www.seriouseats.com/2016/08/b...
I've done a number of videos on making a BLT. What can I say? It's my favorite sandwich, and if you, like me, make yours with perfectly ripe summer tomatoes, it may well be your favorite sandwich too.

I've been meaning to say this for a long time (a few months) and I also have to say that it's not because of BTL's, but you are the best thing I've found on KZfaq and I mean across all genres. And I've been hooked to internet media for 20 years. I love cooking and am a big consumer of online media and never seen videos like yours. Your attitude is so down to earth and forgiving. You are really showing people that you don't have to be perfect when it comes to cooking and even a pro chef doesn't remember everything. Just watching you do basic stuff such as choosing which plate to use and then remembering ''oh yeah I forgot the mustard'' makes me feel so much comfier with my own skills. You've really helped me through the pandemic and given me so much inspiration. I like to recommend your videos to all my friends who are even slightly interested in cooking or starting it. Just watching your vids for inspiration and putting Hania Rani play in the backgound (another great artist I found during the pandemic) makes my time so much better. Hopefully I'll get to visit your restaurant some day. Thank you for what you do and love from Finland!

I admire the financial independence of people, But you can live better if you work a little more. After watching this I think there are people out there, on the extreme, who plan to die early just to be able to retire early. To each their own but to me, retirement isn't just about not having to work, it's about having the freedom to do whatever you might reasonably want, such as travel, buying things, enjoying life, etc. I don't think I could retire with less than $3m in income-generating investments, maybe $2m at the very minimum. I plan to work until I'm at least 45

My man Kenji coming in with the redemption for iceberg lettuce! It definitely has some sweetness and a crunch that is hard to beat. For anyone having soggy limp lettuce issues - stick it in a ziplock bag and not just in the open plastic bags you'd put it in at the grocery store. It will go from limp to crispy in a day, and stay crispy and good to eat for a LONG time. I've had a head of iceberg that I slowly use over the course of a full month before you start to see discolouration.

Because of you I always, always, ALWAYS salt my tomatoes, and I usually pepper them, too. Even a crappy store-bought tomato can go from 3/10 to 8/10 with a bit of flaky salt. It really is that important.

As a fellow tomato/blt lover, you made a lot of good little points about the intricacies of a good tomato sandwich lol. Tomato mayo contact is a must but I like to put the seasoned side also touching the mayo, I think it makes the bread taste better. When doing BLTs at home, I usually make a baconnaise using oil infused with bacon. It's fairly simple actually: - Take bacon, approx. 150g/5oz. - Put the bacon in a small sauce pan with 2,5 dl/1 cup neutral oil. - Set over a medium heat and let the bacon confit in the oil until crispy. - Remove from the heat and let cool. - Strain the oil and use it when making mayonnaise. A good tip is to also use a bit more dijon in the mayonnaise than usual, since it pairs really well with bacon.

To me that squarely felt like a chef autopilot thing. It's pretty bad form to just carry protein in your hands to the grill and slap it down, much better to carry it on a sheet pan because you are usually carrying more than one meal's worth, you're usually going further than 3 feet and you need somewhere to put it when it's cooked (Which he did). Obviously it's kinda silly in a home kitchen, but it would be silly to risk muscle memory and mix up processes.
@fcman123
@fcman123 3 жыл бұрын
@@Dazt4r It wasnt so much that he carried it over in the sheet pan, more so the fact that he carefully laid each piece of bacon in the pan first. But yeah definitely autopilot, talking and cooking is pretty challenging., just struck me as a little funny
