This is the best thing BA has put out in forever. I'm also a pastry chef and when she talked about 'being up to her elbows in ice cream, I freaking DIED because that was literally me less than 24 hours ago. She's a great pastry chef because I was inspired to make strawberry sumac ice cream by watching this. Such a good vibe in that BOH too.

Like others have mentioned, the genie is out of the bottle in the test kitchen and it will never be like it was but this type of content is superior and hopefully, you will have much more like this!

Yes. They have not been able to replace all the amazing personalities that left, the new guys are just not on that level, so I don't watch, but this kind of passionate peak behind the scenes of the restaurant is really interesting

I love the way you put it as far as “Interview BS” but I’m not sure if we’re referring to the same thing. I’d use the term for the fake and clearly agreed/planned questions plus all the artificial banter we increasingly hear on NPR.

As an Executive Pastry Chef, she is pretty level headed and calm. Its nice to see how a iconic restaurant can thrive still respecting old timey desserts like the Baked Alaska. One of the staple ice cream desserts you have to master in pastry school.

This was such an enjoyable video to watch. Several times throughout, I noticed myself feeling really good just because I was watching it. Caroline is amazing and she obviously has a fantastic rapport with her staff. She absolutely owns the pastry portion of the operation and is 100% comfortable in that role.

They make it look easy. Damn. I remember working on restaurants. I was young and in shape. I had to soak my feet every night. It's hard ass work! Restaurant (and grocery work) is tough on the body. I've done both. My hats 🎩 off to these amazing people! I worked at the restaurant and bar that had 3 floors. We had tables on all floors for the servers. Dear God.

@@jaybloomfield5082 well... not to be pedantic but genetically, yes we were. We’ve just been able to live lives of a lot more comfort in this era. We have the highest endurance of any animal and our bodies are designed to be good at hunting and foraging for long hours

@@dabearsfan9 Correct, hunter gatherers were on their feet (on soft ground) sometimes for long periods of time, but after they caught their food they would sit around the cave/village and relax. 40 hours/week, every week on your feet is not natural. Granted, I do not know for how many hours on average our hunter gatherer ancestors were standing.

@@jaybloomfield5082 And there was probably still a lot of waiting with hunters (not gatherers, so much). Not lazy waiting, but with reduced strain on their muscles. It's the same way with a lot of predators in the animal kingdom. What those of us in food service do is very unnatural, and it comes at a cost.

It was added to the National Register of Historic Places in 1982." - Robbe Report I live in Manhattan, also an NYC history buff. I'm grateful this incredible place has National Landmark status.

as a former baker, it continues to amaze me that nobody wears hairnets anymore. sure it was ugly AF when i wore it but we'd have been closed down by health and safety if we didn't wear them. on another note - the desserts and G and T look to absolutely die for. great content, Bon Appetit

I miss this so much I used to be a chef pastry chef cake decorator all kinds of stuff and now I have permanent nerve and muscle damage and a list of other stuff not to mention there's no way I could take the stress of a professional kitchen anymore, the occupational therapist told me I could never go back to my field it crushed my soul

I was just there the other week! We ordered far too many appetizers and a large steak for two so we begrudgingly passed on dessert despite knowing they’re fantastic :( BUT, we promised to order all of the bread and dessert when we return! Now we just have to actually manage to get another reservation… 😅

The best meal I ever had was here, remember what I had lobster thermidor! Classic french food, they serve judges, lawyers, professionals in Brooklyn, it really is what you may have found in 1910 or so! Check out their menus! No I don't own the place! Few places like this! Many years ago the servers had strips on uniforms, showing how long they worked their, very old world!

Absolutely loved this! Caroline Schiff is such a kick, dying for her hair. The breads look fab, that devotion, taking care of the sourdough starter during the pandemic. But the desserts, oooh that baked Alaska. That is worth a trip to NY! Really enjoyed this video, thanks!

I visited NYC last summer. Only had one day in the city. Breakfast at Balthazar and dinner from the 99c pizza place. I feel like I could spend a week and not get through half the iconic restaurants

I know the people that brought back Gage & Tollner. Lived in Red Hook where they opened their first places. The Good Fork and Fort Defiance. Went many times to both. Wonderful places. Glad to see their new success.
