The US Barista Championship season is gearing up and I thought I’d take you along this year on some of my prep and training sessions. This is what the early stages look like while I’m still script writing. It’s just a little taste, of course, but the exciting parts are coming up very soon. Can’t wait to be on this journey with you all for the third year running.

Thanks for sharing this side of your competition prep - very interesting! A BTS question re: the lab where you rehearse - How common are they? Do you rent the space by the hour? Also, thanks for giving me something entertaining and informative to watch as I recover after a 2-day marathon of Thanksgiving cooking! (I *might* get off the couch sometime today, lol.) ❤️

I love your video style. It is like we are a friend in the room as you practice. Your comment about enjoying the practice really came home to my experience. I was an Ironman participant. So many times I heard training partners complain about going out for a run or long bike. I loved the practice, the event was just the cherry on the cake. If my race did not go well, I enjoyed the journey.

I nodded and laughed at every point here! I think my points as a “casual” barista: - Everything has its place - keep it that way! - people are generally happy to wait an extra minute or two for an excellent drink, rather than rush something average.

I loved this video. I like coffee, but I don't have a lot of knowledge about it. I watched your WBC video and wondered why they have you make such basic drinks. This video answered that question! Your evaluation of your milk pours was fascinating! Looking forward to more!

Very nice. If I may add, as a long time owner of the Force Tamper you might want to check the option of using the FT as a distributor as well. After Wdt, place the FT on the PF, stable it with two fingers and spin the FT. You can check the results. Later press to tamp

Even as someone who only ever drinks dairy milk, in coffee or otherwise, it baffles me that alternative/plant-based milks were ever /not/ allowed at the competition. I feel like it eliminates a lot of options in terms of potential flavor/texture profiles, to say nothing of the barrier it creates for people who don't or can't consume dairy.

Have you ever messed around and tried using Cherry and Coconut together in a coffee drink? I used to make smoothies at a shop when I was younger and one of my favorite creations that went on our secret menu was a cherry Pina colada type smoothie. The two flavors are so complimentary with the tart and slightly sweet from the cherries and the amazing toasty campfire sweet flavors of the roasted coconut. Love seeing all the amazing mad scientist drinks you come up with. Even though I'm not a coffee purist that loves it straight black, I still love all the different ways you can dress up a the perfect flavor vehicle that is coffee and espresso.

overall critique: really lovely and interesting how you talk about the prep process and the steps you take to prepare. negative critique: I really didnt feel there were good camera angles in the beginning of the showcase of you routine, its just a feeling, but when you said you had a new WDT tool it was not actually shown or commented on from you how you felt it performed in this shot, it would have made really sense to follow up on you indroduction of your new WDT tool. positive critique: 1. I really like the calm talking and deep voice explanations about whatever you talk. if you know what I mean, Hoffmann and you share a talent, voice rhythm and the deep voice help to really make it really enjoyable to listen to you. 2. nice smooth handling of your portalfilter. :P 3. actually I just planed to make an algorithm comment, keep on doing a great youtube and competition job.

I enjoy milk as a great dairy alternative. It doesn't foam well though. It tolerates higher temperatures better than other milk alternatives I've tried.

I use a Barista Hustle pitcher but looking at my art .. it must be a defective one ;-) As someone who just makes coffee at home I do try to streamline but very vague and haphazardly. I’m inspired to think about workflow now!

This is so interesting. I have so many questions tho like is being a competitive barista enough to pay the bills or do you work at an actual coffee shop during the rest of the year? What is the barrier to entry for this like how do you go from a regular barista to competing? Do you take classes for this? Is there like prize money or is it just glory? Do you do like coffee consulting on the side?

Having only found your channel a couple of months ago, I'm excited to watch your journey! What is the first tool for? Does it break up any grinds that get stuck together?

Pretty much! It’s a distribution tool so those needles break up major clumps and more evenly distribute the coffee grounds through the portafilter. The idea is to prevent channeling and allow for an even extraction through the puck.

I’m considering it for this year. In past years, I’ve just really preferred the movement that using a Lunar has allowed me but I’m starting to run into issues with the types of cups it limits me to.

So very awesome - thank you for bringing us behind the scenes with you! Now that baristas are using freeze-dried milk powder, do you think using freeze-dried coffee as a tool to enhance flavor will enter competition too? Is that even allowed? (EDIT: a typo)

You could use freeze dried coffee as an ingredient in your signature beverage but it wouldn’t be allowed in your other courses (at least at this point)

Very fun. Im wondering why you went from the Moonraker to the other wdt device. I made two, one like a Duomo and one like a Moonraker (from actual spirograph parts). I think the latter is much better. Thoughts?

The Autocomb is a bit more robust/durable for something like competition, like physically. Moonraker functions better in home use. In terms of extraction, I haven’t noticed a major different between them but that could change as I get more testing done.

I *hate* how the sponsored machine limits using actually good serving vessels and running actually good profiles

I hear you but I view it more as just part of the game. The sponsored machines usually change throughout the different levels of comp (you’ll likely end up on something different during prelims than you will at nationals and worlds) and it’s on you as the competitor to feel competent at pulling great shots with what you’re given. In an ideal world, would you be able to profile all of your shots? Maybe, but that makes the logistics of competition tricker.

Those shoes are definitely verging on scam territory. Nothing besides your approximate shoe size could be told from a top-down photo. They’re just taking a bunch of commercially available 3D shoe designs and vastly marking them up.
