@Macoi24 invited me out to taste a very special Banh Mi in Saigon, Vietnam. Besides fo just an overall quality banh mi, what makes this vendor so unique is her Pate. After the Pate has been steamed, which is the typical method, they then "Grill" roast the pate which completely changes the texture. Making it a bit drier and thicker. Very cool technique and a very tasty banh mi.
