definitely. i know the feeling of always wanting to finish one more thing and then out of a sudden, the body shuts down and you are sick for a week.

Becky, if you have the time, harvest your cilantro and run it thru your food processor. Pour the minced cilantro into a freezer bag and toss in the freezer. You’ll have cilantro to add to recipes so it doesn’t go bad in your garden. ❤️

Ice cube trays first, and then into freezer bags once frozen 👍

Freezing drying would be a cool experiment - perhaps it can better retain its fresh taste and texture! I feel like cilantro just isn’t the same after freezing in the freezer.

I love your philosophies: Eating in w/o carry-out; "going with the flow" instead of strict menu planning; using what you have. I have just completed some intense stocking up as we took advantage of grocery stores while visiting family. Now I'm committed to eating from the pantry and only buying super specials to restock. I brought back plenty of empty canning jars, and am ready to fill them up too. I'm really excited for every video you produce! Thank you for taking us along on the journey, and I think most of us really enjoy seeing a little more of Josh!

I’ve Started zesting every lemon 🍋 I use, whether or not I’m gonna need it for that particular recipe and just store the extra in the freezer. Then, I squeeze all the juice out and freeze it in ice cube trays and pop them out to store in a plastic bag.

Thanks Becky, glad you’re feeling better! I have say you and Josh have motivated me into starting on my bathroom demolition! It has needed to be done for a long time! I was going to say, if you decide to take down that pony wall in your living room you may want to put electric outlets in your floor there if you plan to have furniture there at some point! I see the wall already has electricity in it! Take care!

Becky, my daughter and I enjoy watching you cook and hang out in the garden. You have a beautiful forever dream house and we are happy for you and Josh. I’m so thrilled that you manage to keep cooking and homesteading which is my favorite thing to watch on KZfaq. I thought you were going to let go of cooking and I felt so disappointed. I just want to say thank you from my husband and son. They absolutely love, and I mean love the breakfast burritos 🌯. In 🇬🇧 Mexican food isn’t that big. So the breakfast burritos are a new staple in our house. Thank you for your vlogs. Glad you’re feeling better, and loving the new additions of home renovations added to your list of talents. @@RaeC5280 we have lots of Indian and Chinese restaurants 😂 I do cook a lot of Mexican meals at home. I make something like a burrito. I put fajita chicken or taco mince meat (ground beef) in a pentagon shaped pocket wrap, oven bake until it’s nice and crispy. There is probably a name for it… but I have not a clue 🤷🏽‍♀️ 🤣💋

I'm glad that you got your house of dreams! And same time I realize how much work you put in it. Just wanted to wish you both good luck! For those who searches fast and nutritios recepie, mine to-go in 15 min : boil pasta for 2 people, meanwhile drain can of tuna cut a half of English cucumber, half of green bell pepper and onion to liking (I like green onions), some spinach or any greens . Add cooked pasta, vegetable oil, lemon juice, salt and pepper. Nothing to wash, 15 min, full of nutrients. Sometimes I use this recepie like base and go from what I have on hand.

It's hard to meal plan for just one person ime. My most successful meal plans when it was just 1 or 2 people eating were making meat and rice and then a few sides and kinda mixing and matching so the flavor was different from day to day.

I meal plan, eat one portion immediately, and portion freeze the rest. It is a great way to take advantage of sales. Josh Cortis' youtube channel has a ton of recipes and I have lost a bunch of weight by meal planning.

Becky, I need to tell you. I have been struggling with depression, grief and postpartum after loss for almost a year now. Food is a love of mine but I have been generally uninspired by food for that time. Since finding your channel just 2 weeks ago I have been loving creating new things in the kitchen. My husband is happy to see it too! Between you and my garden I am feeling more and more ready to get back into the world. And being now 18 weeks pregnant again it's given me a new energy in many ways. My sister and I are preparing for a freezer meal day soon! I will be trying some of your recipes soon. Thank you XOXO

This past week I made 2 freezer meals. One is stuffed bell peppers. I enjoy using Becky's seasoning salt, it's delicious and adds so much flavor. I also made the cabbage rolls per Becky's recipe. OMG, it's delicious! I followed Becky's lead and put the tomatoes in the blender with the raisins. The sauce is awesome this way. Happy cooking and baking, Debbie

I do prep for my husband for work and will do soups etc and freeze. Other than that, I’m the complete opposite as Becky. I love cooking and prefer to cook every single night even whilst running my farm and so on.

roasted zucchini is my favorite! its the only vegetable i can get my picky roommate to eat! roasting with spices including lots of paprika and then dipping in a buffalo ranch wing sauce is my go to for an easy lunch

Also, for things like freezer burritos or sandwiches, I highly recommend buying a simple electric grill. This way your food will be crispy and fresh, and not just soft and warm like from the microwave.

Try your zucchini and other vegetables on the grill. Amazing!!! Even those who wouldn't eat vegetables fought over them and are always begging for more! As always, love the channel!

Remember last August when you did the preserve a little every day? Despite the emphasis on house projects, I do suggest spending upto an hour every day in the garden and at an hour doing food preservation every day. Time to get the freeze dryer and the dehydrator working for you; each involves a little bit of prep, loading trays, setting the machines to do thier thing, then unloading the trays. Much less work than canning, much more idle labor. You don't want to lose whole crops like the cilantro - unless you're able to revive it by harvesting coriander.

Another way to look at it is to eat what you have or else you’ll have to move it, lol. Every full jar that gets used is one less pound to move. 😉. Congratulations Becky and Josh! So proud and jealous of your dream home. I’m still dreaming and planning. Unfortunately, I take care of my mother (😍❤️) so no moving yet. My mom is nowhere near a “homesteader”. Some days (most), she thinks I’m nuts. Well, until she runs outta something 😂. She’s very aware that she would have starved/died if she had been part of our family’s initial immigration from Germany. They were big homesteaders and our original homestead was in the family 100 years during Reagan’s term. We got a letter from the government congratulating us. It’s gone now unfortunately since I would have carried on happily. Blessings on your journey. May it last 100 years!

Hi Becky, was watching an older video, you were at Cosco, cutting boards, you said you didn't like your colorful ones. The colors define what you use them for. Red for red meat, yellow for chicken, green for vegetables. It cuts down on cross contamination. Love your videos, I learn a lot.

Smart to have food made. No need to eat into reno budget with take out and the food doesn't give energy when eaten. I'd keep fresh fruit in fridge over there too. Chop veggies and bag them is small containers to walk away with them. We also had pickle jars full of water in fridge to get as needed. I love my camelbak for that.40 oz stay cold for over a day in the metal version. Stay strong and don't drive fatigued. Probably smart to have some dog food there and cots and bags to stay over. You could always have bath towels and washcloths handy. Take care

Try a little dry rice in your seasoning salt. It won't clump. Maybe a grip in cheesecloth. Your awesome. Any kids in the future?

Gah! I love this. Thank you for keeping it real. It would’ve been easy to cut your hard days out but thank YOU for sticking with US. Your following just keeps growing and growing, and each one of your audience is seeing you say it’s ok to have bad days, it’s ok to take breaks, and prioritize mental health, and you can take the easy route sometimes. Becky I'm so happy for you and Josh with your new home but I do not envy you packing everything up and moving I live alone and when I moved into where I'm at now it took me almost 3 weeks I didn't realize how many things I collected LOL over the years in my old place. Your orzo salad reminded me of a roasted veggies & orzo salad I used to get at Whole Foods back in the early 2000's. It was so good and, if I remember correctly, cost almost $10/lb, even then! Now I'm feeling like I need to make it myself. Thanks for the reminder and I hope you're feeling better!

We are in the proces of moving - from California to Northwest Washington. I can't pack any of my pantry or freezer items so we are eating well right now, but will have to start from zero as of October. I'm jealous you are able to keep on with your garden and food preservation. And...... there is no such thing as too much cheese. :-)
