@ I mean it's meat fried in bread crumbs. I'm surprised there's even a specific culinary term for it. Reminds me of the debate about the origin of french fries. It's potatoes chopped up and dropped in hot oil, the natives were probably doing it in South America 20000 years ago.

I truly enjoy listening to rip talk about his life/childhood. I find him to be an extremely interesting person, and I see a lot of my own father in him. I really hope there are many more Texas cafe videos soon!

I was born in Dallas and raised in Houston. I live out west now and people are horrified to learn that I regularly bought and ate tamales or plates of food out of the trunks of total a strangers cars, advertised with a spray painted sign with at least one word misspelled.

Enjoyed it. In Germany we use "Paniermehl" for the "Schnitzel". It is made out of hard bread and used like the flour.

Yeah in the us they don't have much of that but they do have panko which I have found as the best substitute

@@willyschwerin you can make it yourself by rubbing crispy old bread over a grater. We make it from old "Brötchen" which are very small breads, you usually cut in half and spread with cheese or sausage.

As I understand it, the origins of "chicken-friend steak" are in german immigrants adapting schnitzel to the most readily available meat in the midwest, which was beef. Pretty neat!

Saw your video this afternoon and decided to make chicken fried steak for dinner. Cooked up some pork cutlets exactly as you described and added a country gravy, they were fantastic. Much easier and tastier than deep frying them, and a whole lot less mess. My 9 month old wolfed it down too. Thanks Rip

Papa Rip-thank you for the vid. I actually just made the cuban version-bistec empanizado- in a skillet. Good to know chicken fried can be made on a griddle. I will try this next

Old Texas, Kansas, Missouri, even Arkansas Cafes MUST serve coffee in white mugs that are slightly inverted curved in the middle-- go onto Amazon and search "greasy spoon mug" and you'll see what I'm talking about.

Tnx coach Rip for revisiting this old classic! There are different variations of this food as Germans call it schnitzel and in Russia it's zhareniy karbonad. I made this food in Texas cafe way only i used small chicken breasts instead of pork/beef. It turned out very crunchy outside and tender inside. If i added some cayenne pepper/more spices it would be almost like KFC just 10 times better.
