Will the gas not always be interrupted as you will always conduct a tightness test when servicing or installing a gas appliance

Need to ask when it says 'check flueing and is it suitable and capable of removing products of combustion' how exactly is this check done for a fire? What exactly are you checking, if the flue/chimney is behind the fire and you cant see it? How can you ascertain if its capable of removing products of combustion without a flue flow test which you said is not required on a visual. Sorry for these questions
