People often say that using TRIM is not a secure way to delete data, because it can be recovered with the chip-off method, or factory access mode... Is this true?

Yes and no, the data would be fragmented and only very small chunks could be recovered. It also depends on FW, controller and many other factors

Controller is not needed as long as it's the same one

@@forensicguy i thought nowadays ssds have encryption on controllers. I guess some are still don't

They are but the firmware is located on the NAND, hence why you can swap nand as long as the donor is identical
