DOREEN you are so right, I have a passion for learning and experiencing different ways of life including different cultures. It's a special gift you give to someone when you share your culture with someone else. I live in New Zealand and we don't have Thanksgiving and for Christmas it's more traditional in my family to roast a chicken or have a glazed ham. Peter is a great father and a role model to lots of people in many different ways. I hope that wherever you are from that you and your loved ones have a Merry Christmas. Xx

23:00 " i want to cook like you papa" I love how the kids are calling you papa. They already consider you their dad and not just a foster parent. An older foster kid would probably be less likely to call you dad or papa and will just see you as a friend or a nice person but for a younger kid, i think it's easier for them to bond with their foster parent.

You can use a cooking bag to cook the turkey in which keeps it moist and the juices around it. Really saves on clean up. Also the turkeys with the poppers are really helpful (they are on the top of the turkey and pop up when the turkey is done). Butterball turkey also has a hotline for help!

Thank you for sharing this. Don't worry about stuffing, dressing is better texturally and very very simple. The difference is that dressing is baked in a casserole pan instead of inside the bird. Buy a bag each of pepperidge farm corn bread and regular dressing mix and then mix them together. Double the amount of onion and celery directions each bag calls for but otherwise follow the directions. It's great with gravy once on your plate as well. Hope this is helpful.

Peter you are amazing stepping out of your comfort zone cooking a turkey. It's awesome that you got the kids involved and did it together. One of my foster kids had type one diabetes and I got him involved in cooking so that he could be in some control of his meals and also shopping for the ingredients for the meal he chose to try each week. We would call it adventure cooking and it always made me smile at the supermarket because he would look at all sorts of ingredients to see if it was low enough in carbohydrates for him to try. He came to me at age seven (I knew him since he was 4 as I was a school teacher at his local school) and had never been to a supermarket or restaurant so he just blossomed. It sounds like you are listening to Chef John's KZfaq channel for the recipe. It's really special doing this as a family, your kids are all amazing. Xx

Hi Peter, you can go to the grocery store and get turkeys already cooked, the dressing or the stuffing, all the vegetables and mashed potatoes or sweet potatoes. They have menus that you could get already cooked. To cook it yourself thaw out in the fridge or in cold water you need a deep aluminum pan and the Reynolds wrap bag. Better the turkey season it with your favorite seasonings make sure to take the giblets out of the insides put the turkey in a turkey bag with the tie on it. Place a turkey breast down in the aluminum pan make a couple of little slits in the turkey bag put it in the oven on 350 and cook it until it's done. Look at the weight on the turkey wrapper and check how many hours you cook it for. The bigger the turkey the more hours they cook. You can cook it slowly overnight also. 💛💛🙏🙏 In Jesus Christ's Precious and Holy Name.

The butter doesn’t have to be hot and when the turkey starts to get too brown you can put an aluminum foil tent lightly on top (don’t seal it around the turkey) just on top and it won’t continue to brown or burn. You can buy stuffing in a box (called Stovetop or Uncle Ben’s) cook it in a pot and it tastes just like homemade - especially when you use some of the water from any cooked veggies. In Canada we have Thanksgiving Day in October. You always inspire me! ❤️🇨🇦

Put a sheet of foil on top of the turkey when it's in the oven to prevent it from burning. You can do that either before it gets golden brown and then remove it for the end of the cooking time or you can do the opposite and brown it and put the foil on top to stop further browning.

I always put my frozen turkey in a clean sink in the kitchen with cold tap water with salt (2tablespoons) and change up the water every 4 hours. I cover with plastic wrap. My turkey’s are no less than 25 pounds depending on the guests. The other thing I have done is put my turkey in a big plastic storage container with a lid and after rinsing it with cold water, I make something called a brine adding salt and sugar. This makes the turkey tender. My spices are just like the song 🎶 Parsley, sage rosemary and thyme. This is in the stuffing but that’s another story lol. Salt & pepper too) coat the bird with butter on top for a naked skin or for a taster bird, pull back the skin carefully and stick my hand under between the meat and skin some prosciutto rosemary on the vine. I also baste my turkey as I buy some turkey broth for that.

I was taught the way to thaw the turkey was in the cold water bath. Do you leave the turkey in the wrapper? It came in and place it in a cooler with cold water in it. After a few hours with that water in it, you change the water Again. And then you repeat this process. You can leave the turkey in that cold water overnight. As long as that turkey is still partially frozen. Meaning it well be cold enough to keep it from becoming bad. Here up in the north in Wisconsin we are often able to keep that in our garage with our temperatures often close to refrigerator temperatures around the holidays. It’s important to have everyone wash their hands after they’ve touched any of the raw turkey just the same as they would if they’ve touched raw chicken or beef. Merry Christmas.

Eek yes & that turkey juice sachet was in the turkey, now raw meat residue transferred into worktop. In U.K., no need to rinse turkey, I think. I know they chlorinate chicken in USA for sure, perhaps unless it’s organic. More potential transfer of bacteria when rinsing the meat and it landing on kitchen surfaces.
