I think that he stopped that bullet since he knew where it was heading unlike others that he didn't notice because he was focusing on something or someone else. I mean the final battle in AoU was so messed up. I just feel that it's sort of unfair to compare between someone who was going to die at the end anyway (because of studio rights) and someone who is going to have another film. AoU Quicksilver had a shorter and more miserable life but still a cool personality. I really enjoy the character. :(
