Happy national holidays, Peru! To celebrate this July 28, we decided to prepare two classic dishes of Peruvian food: Ají de Gallina and Suspiro a la Limeña. The ají de gallina is one of our favorite Peruvian dishes that consists of ají with frayed chicken breast (or chicken), served with cooked potatoes (or sometimes white rice), hard-boiled egg and black olives. It's delicious! For dessert we prepare Suspiro a la Limeña, a dessert that originated in the Peruvian capital. The dessert has two parts, a white delicacy and a meringue with port wine, which gives it a nice lilac color. Another reason to celebrate July 28 is that it is my parents' anniversary, so we prepared this meal to celebrate their 42 years of marriage!
