2 yellow onions
3 guajillo chilies
2 garlic cloves
1 1/2 cups water
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
2 tablespoons olive oil
4 garlic cloves, sliced or minced
2 bay leaves
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 tablespoon chicken bouillon
Kosher salt to taste
Garnish with lime juice and fresh herbs
For the Meatballs
1 lb ground beef
1 lb ground pork
1 teaspoon Kosher salt
1/4 teaspoon black pepper
3 slices white sandwich bread (crust removed)
1/4 cup milk
1 large egg
1 tablespoon parmesan cheese

1/2 cup caramelized onions
