This is really easy! Thanks for sharing. However, I had no idea about the garlic oil. Will that work with plantains on the sweeter side? The first time I ate a plantain was when we were told how to cook them by my sister in law, who is Cruzan, when we visited St. Croix several years ago. They were excellent. Sadly, last weekend was the first time I'd seen a proper plantain in the grocery store. I had a guy from Jamaica test me to see if I knew how to cook them, and then he gave us some tips. It was like we were instant friends, talking and laughing in the store. If there was ever a time when I had proof that food can bring cultures together, that was it. Of course, the walls started to come down as soon as he learned by sis in law is Cruzan.

A couple of things: when you drained the potatoes, did you mash them right away? I find that after you drain it, leave the potatoes in the pot on the stove so the extra moisture that’s in the potatoes can evaporate. This will result in a drier potato that binds well. Also, Did you add the cornstarch into mix? Cornstarch helps against moisture so that your relleno doesn’t come out gummy. Lastly, make sure your oil is not too hot. I fry mine around 350-365. I’ll be making a longer video on this soon.

If you’re not frying right away, it’s good to put it in water so it doesn’t oxidize. Also, I find they come out crispier when they soak in water. Thanks for watching 🙏🏾

It’s probably because you’re not allowing the excess water from the cooked potatoes to evaporate after straining. Try to leave the potatoes in the pot (on the stove) once you’ve drained them. Also, add a teaspoon of cornstarch, this should help not to be gummy. Let me know how It turns out 👍🏽

I love cocadas! Unfortunately they have disappeared from Sao Paolo where I live. The last time I saw one for sale was decades ago. I guess I'll have to make my own cocada, following this recipe! I guess the darker one was my favorite as a kid. They are EXTREMELY SWEET for sure, just like any other Brazilian dessert. 😂

I didn't know they had cassava cheese bread in Colombia. Pão de Queijo culture is so strong in Brazil I could swear there was nothing more Brazilian thant it, but I discovered it was invented in Paraguai hundreds of years before arriving here: CHIPA.

A tip for frying acarajé is to leave an onion in the oil. It will assure the correct temperature. That's how people traditionally do it in Bahia. And traditionally it was a religious food. In the past only girls could make it and take no profit from selling it for several years. A kind of penitence.
