I just bought a new Alfa Forni Brio dual-fuel pizza oven... uses either gas or wood. Out of the box it's set up for propane, but with modifications it works with natural gas. Hooked it up to the gas line and fired it up.. worked great! Hit 900 degrees in 20 minutes. Next day built a wood fire and made some wonderful Napolitan style pizza. A few days later I turned the gas back on but had a problem. The oven would never reach cooking temperature, and the gas would turn itself off by itself after 5-10 minutes. This video shows the problem. Fortunately, I bought from a local dealer in NJ and they were very willing to call Alfa for me. I am expecting a replacement gas burner very soon.

Sounds like an exceptional product and AMAZING Customer Service if you ask me! Gotta love a company that stands behind their products with quick response for the consumer and their dealers!

Probably late to this but had NG (natural gas) on a lot of my appliances to save cost and make it convenient. Finally I abandoned that in favor of LPG or bottled low pressure gas as I can not only roll the carts and appliances around but it gives off twice the energy or BTU's as NG. It could be you had the wrong burner.

It has happened to me as well, but I have an older Alfa One. I was able to cook my pizzas by lowering the heat to low and letting the unit preheat before cranking it up on high. I haven't made pizza since, but hopefully if the problem reoccurs, I can repeat my fix...

Researching for a gas or possibly a gas/wood at the same time oven for a little wood smoke flavor. I've seen some that you can burn a little wood on the side while cooking with gas, or do just the gas or wood. I have a ooni 16 gas that I have used regularly for over two years and have had no problems whatsoever with it. It has no door but being a smaller oven it gets up to 800° F plus in 15 to 20 minutes. I really like the ooni but want something larger with a bigger opening and possibly a door, and the option to use gas or wood. Many of these ovens seem to be way overpriced for what they are. The ooni at $599 was also a little overpriced, but it has done surprisingly well with no issues and still works great over two years later. Ooni does make a optional door but with the small opening and low profile I don't think it would make a difference, especially since a pizza cooks in one and a half minutes or less. I like the look and size of the Alpha...but it seems that people are having issues with the burner even when new.

I think I just got a "lemon" gas burner, but since the dealer replaced the burner it has worked perfectly. The Alfa pizza ovens are made in Italy and are top quality, so they are expensive, but it's nice having a large oven where you can comfortable put two pizzas at the same time (maybe 3 if you are good at shuffling them around. Alfa strongly recommends against burning any wood while the gas jets are operating -- if you are using a wood fire they provide a very heavy cover to use over the gas jets to keep ashes from clogging up the works. I'm not sure that the wood flavors the pizza -- lots of different opinions there. But having the "dual-fuel" model is helpful if I don't have the time to build a fire and nurse the flames. Gas is way easier, but you should be prepared to make at least a couple of pies to keep the gas cost-per-pizza down. Overall, it's really nice having big oven.

Can we use both wood and gas simultaneously? Adding just one single or pcs of woods with gas for the smoky flavor? Or it will be an issue?

You are not supposed to use both simultaneously. That's because the ashes created by the wood may clog up the gas jet openings, which are quite small. There is a heavy metal cover that protects the gas jet, and that should be used when making a wood fire.

Did you use the optional burner cover when you fired it with wood? I’m considering this unit and was surprised the cover wasn’t included if the burner needs to be protected from soot when using with wood. Appreciate you taking the time to post a helpful video.

I purchased the "Hybrid" kit with the burner cover, and yes I did cover the burner when I built a wood fire. The burner was replaced last week and the new one seems to be working fine. I'll use it for a while and then update this video. Thanks for your comment!

I think you’re turning the heat up too high and you’re causing heat to rush out. I believe you need to turn it down first and gradually go up if needed. The curve of the oven is what creates the heat environment. So turning up the heat creates a wicked vortex so the oven overheats quickly and will shut off. That’s my guess.

Natural gas vs. propane/butane burners. Another potential issue ash in the burner. Often, removing the gas burner is required when cooking with wood in a dual fuel oven.

Can you point out major differences when using wood versus gas. Do you taste difference in pizza. I am planning to buy wood fired oven but it looks to be cumbersome and complicated.

Wood does make it taste better, but it takes more work. The "hybrid" ovens are convenient because if you're in a hurry you can just turn on the gas and GO!

@@ECGDoc You can't taste any difference. The difference you perceive is because you're smelling wood, nothing else really. Btw, good to hear Alfa's pretty responsive :)

I recently got the next larger Alfa hybrid. The 5 Pizze (formerly Allegra). It came set up for Natural Gas and I did the conversion to LP. I am having similar issue. Can not get over 300 degrees. Flame not strong enough. Then it pops off...I guess I will need a new burner as well. How long did it take for you to receive the new burner? And now, are you getting a good, high heat?

Hi, David -- All is well now that the burner was replaced. I used it this weekend and got up to 800 degrees within 20 minutes or so. I bought it from a local dealer (not online) so they were very responsive and their installation guys were able to install a replacement burner within 2 weeks. The replacement was already set up for NG so I didn't have to fiddle with it. Now it works great so if my pizzas turn out lousy it's my fault! Well, there's no such thing as lousy pizza, right? Good luck!!

@@00berserker I'm afraid not, because the place I bought it from came over and replaced the whole burner unit when I was away from home. They ordered it directly from the Alfa distributor in NJ. Sorry!

Happened on my unit as well. The distributor - Lakeview - replaced the burner and that one lasted for last summer and 3 pizzas this spring and now the replacement burner has the same issue. There is clearly a design defect. I’ve reached out to Lakeview and await responses

Aww..MAN! That's terrible! I've used mine just once since the burner was replaced and it was fine. Planning to try again next week. Considering how expensive this oven was, you'd think that it would be reliable!

Both times the problem occurred after the unit heated up for 30 minutes and I adjusted the valve to the low setting. I’ll let you know how it turns out.

Metal ovens…. SMH, not real ovens. It’s not hitting because your oven has no thermal mass. I but dollars to donuts you couldn’t cook 3 pizzas in a row with a cooked bottom. Just listen to that metal expanding and contracting, sheet metal and rivets make amazing ovens. NOT… Cheap and overpriced

Bless your heart (and the others that buy based on youtube videos by people that don't have any idea what they are talking about), I guess there will always be people who want the real thing and don't have any patience to really understand the how/why real ovens are built and also aren't willing to save up to buy properly made ovens vs buying whatever fits your "budget" today and "ON SALE!" drives your buying decisions - Alfa ovens show nothing that they are durable or anywhere close to worth the price - they are just welded steel with some superwool (ceramic insulation blanket) in it which is an insulator and not thermal mass but hey lets don't argue over real details on how good ovens are built.... Don't worry, you will see in a couple years that this thing was a bad mistake. Or maybe you will just struggle the entire time because you won't ever realize what a well built oven can actually do vs these overpriced, cheap ovens - if you absolutely MUST buy a metal oven just buy a "pizza steel" - a thick piece of steel that you place in your home oven and use that as the oven floor. It will cook a crap ton better than this alleged...ahem, oven..... and will save you a few thousand bucks, you are welcome :)

@@vaporwareproducts Do you have an opinion on the Zio Ciro Subito Cotto series of ovens, which are in the same price range as the Alfas? I get the spirit of your comment - marketing and splash have loads to do with the sale appeal (and Italiano, so that's a plus 😉), but it does not translate to utility. I'm beginning to realise that, having gone through a few electric ones. (And i don't need a pizza oven, but being able to use wood is a good option).

@@tangohotellima1895 hey Tango, thanks and of course I have an opinion :) what is that they say about opinions? Unfortunately I am not a fan of the Ciro either for very similar reasons. They sell this oven primarily as a kit basically a refractory shell which is far from an “oven” (lots of areas to mess this up - primarily not enough thermal mass, wrong insulation, etc.). Their preassembled ovens (I used the 100cm) have very little thermal mass - how can a real 39” interior oven only be 650 lbs? It should be over 2,500 if you want a properly built oven that will hold heat. To me it screams that all these prebuilt ovens are is the refractory shell with some super wool ceramic blanket as insulation or some calcium silicate board (not the right material), hardly a proper oven and certain to frustrate experienced oven users similar to what you mentioned, sure the oven may heat up quickly (as they say in their marketing, but we should ask why? Because again little thermal mass means there isn’t much to heat up and consequently won’t hold that heat either - causing temperature swings and even worse your oven floor won’t stay hot, the problem gets even worse if you use gas - please folks don’t get the small one with only gas at a minimum if you have to buy it get a larger one that is a hybrid. Again I love my tiled Terraforno oven, it built like a brick s. house, has very thick thermal mass and insulation plus a thick refractory sub-floor to hold heat pizza after pizza :)
