I believe that using the table top to plate the dessert shows the skills and originality that all judges look for in these type of competitions. I will not sit here and pretend to know why they have such competitions, but I thought it showed the true skill of the chef. If he can do this on a larger scale, imagine what he can do on a plate? Also, he paired his food very well. Adding coconut to a chocolate dish is very exotic and brings the cacao flavor out of the pudding and the sauce.

very well said. I would have added matcha as well. That, with the menthol, would have been amazing. Refreshing, slight citrus and creamy. Again, great to see someone who respects the science and art of food. Thanks for the support.

I think people don't understand how much time and effort went into the preparation of the ingredients. I'm not sure why anyone thinks it looks like a mess, it's obviously well presented and the concept is to have it laid out on the table.

It's not only about the food and how it tastes... it's about the experience as well. This is something completely different; they're taking a "plated dessert" to a another level. Many of you guys don't understand this... And how are you supposed to eat this? Come on... don't see it as a table... think of it as a huge plate... I mean, what's on a typical plated dessert: the main dessert component, couple smears of sauce, and a garnish. Is this not the same?

I think people are just more accustomed to seeing a dessert classically plated...on a plate. I never would've known there were restaurants that served desserts directly on the table if it had not been for my chef instructor who told me so. It was definitely a new concept for me, but I like it.

@blairzel Actually this combination seems pretty good to me. The hyssop seems a bit weird, but everything else seems very good. It's also quite cool to have it given to you like that as well. So besides the hyssop, for me it seems great.

I am highly impressed how ppl here have missed point. It's so sad to see such ignorant criticism towards Grant's truly amazing work and creativity. If you don't like or don;t understand something why would insist being so unrespectfull with other ppl's work.

I think if you viewed it from a bird's eye view it would look good. At the end of the day if they take a lot of time and effort to prepare each ingredient, they're obviously going to want to present it in an artistic light. Sure it's pretentious, but the upper end of fine dining has to be - bear in mind, this is one of the highest rated restaurants in the world. They have to find an edge and an angle in their presentation.

Not to mention his restaurant in the video has 3 Michelin Stars... assuming you know what that these stars are.... you must know they're a pretty big deal, especially if he was able to obtain 3.

Edible artshow, plain and simple. People pay to go to designer art shows and collect the art. This doesn't strike me as being much different. Pretentious? Perhaps, but isn't most "art" pretentious to one degree or another? If this interests you and you live close by, you may consider going to a dinner event the same as you would take in a high level production. I find this fascinating as to how I can combine the flavors and structure on a more contemporary scale to more "homestyle" cooking.

with a spoon. you put the food on the spoon in your mouth and chew. Then you swallow and repeat the process till all the food is gone or you are no longer hungry

I love the "trained chefs" saying it's "bullshit" or "plain stupid".There's a difference between a 'trained' chef and a 'great chef'. You may think that it's stupid but it doesn't stop it being one of the best restaurants in the world. Instead of sitting on youtube slating other chefs work go and actually train to be a 'great' chef; work towards having three michelin stars and being headchef at one of the best restaurants in the world and get some respect. If you don't like it, don't watch it.

Art? this isn't art - it just saves on washing up. If you think art is serving dessert onto a table i feel sorry for you. It isn't an art experience either, that would be having protein sugar and fat injected straight into your stomach or something. I've always enjoyed cuisine art, but this doesn't look like food or art. I'm sure you paid a lot for this as well. What a waste, you can't even eat it. Dabbing your pinky into some coconut milk and then it's gone.

You miss the point and sound like a communist. Is life just survival at the lowest point? Because some people have no shelter does that mean great architecture is meaningless and we all should be living in shanties and huts? In a free society we are free to chose how we spend our money. Having just eaten there I would humbly say that $275 is a bargain.
