3 NEW ways to cook eggs, and none of them are for breakfast! What more could you want?
Avocado Toast with Poached Eggs-
Ingredients:
4 slices white bread
4 tablespoons mayonnaise
2 ripe avocados
1 teaspoon kosher salt
¼ teaspoon black pepper
4 eggs
3 tablespoons goat cheese, crumbled
2 tablespoons chopped chives
1 teaspoon chili flakes
Steps:
In a saucepan on medium to high heat, fill with water and bring to a simmer, not a boil.
Next, crack an egg into a bowl. With a spoon, stir the simmering water, to create a whirlpool. Drop the egg into the center of the whirlpool. Egg white should swirl back on to the yolk to keep the egg together. Cook for 3 ½ minutes, to keep the yolk runny. Repeat with remaining eggs.
On a plate lined with a paper towel, place each poached egg to absorb excess water.
On each slice of bread, spread mayonnaise evenly on 1 side.
In a skillet on medium heat, once hot, add bread and toast until golden brown, about 2 minutes on each side.
Scoop half of an avocado and make thin slices lengthwise. Next, carefully, place on top of the toast. Repeat for remaining avocados and slices of toast. Then, add a poached egg on top of each. Be careful because the egg is delicate and could break. Season with salt and black pepper.
Top with goat cheese and chives. Sprinkle with chili flakes. Enjoy!
Shakshuka-
Ingredients:
1 tablespoon extra-virgin olive oil
1 small yellow onion, grated
1 green bell pepper, grated
1 small jalapeño, finely chopped lengthwise
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon kosher salt
1 (28-ounce) can crushed tomatoes
2 tablespoons parsley, chopped
¼ cup feta, crumbled
4 eggs
2 tablespoons butter
4 slices country loaf bread
Steps:
In a cast iron skillet on medium heat, add olive oil and sauté the onion, bell pepper, and jalapeño. Sauté until soft and slightly charred, about 4 to 6 minutes.
Next, add garlic and cumin. Stir together and cook for another minute. Stir in tomatoes and salt, then bring to a simmer.
With the back of a spoon, create 4 little divots (also referred to as wells) on the quarter hours in the tomato sauce. (Quarter hours are 12, 3, 6, and 9) Gently, add 1 egg in each divot. Cover and cook until whites are set and yolks still runny. Remove from heat, and sprinkle with feta and parsley.
Spread butter on both side of bread. In a skillet on high heat, place bread and toast for 2 minutes, then flip.
Add toasted bread to the shakshuka and enjoy!
Egg Soufflé with Bacon Arugula Salad-
Ingredients:
3 tablespoons butter, plus more for greasing
3 tablespoons all-purpose flour, plus more for mugs
2 cups whole milk
½ teaspoon kosher salt
½ teaspoon black pepper
¼ teaspoon ground nutmeg
4 eggs, separated
Juice of 1 lemon, divided in 2
1 ½ cups gruyere cheese, grated
¼ cup chives, chopped
Zest of 1 lemon
4 cups arugula
4 slices bacon, cooked and torn
2 tablespoons extra virgin oil
½ teaspoon kosher salt
Steps:
Make the soufflés - Preheat oven to 375 degrees.
Grease 4 mugs generously with butter. Sprinkle with flour and move each mug around in a circle to make sure all sides are covered. Then, with each mug, tap any extra flour out.
In a saucepan on low heat, melt 3 tablespoons of butter. Whisk in flour until fully blended and smooth. Next, add milk and whisk until mixture is smooth and thickened. Stir in salt, pepper, and nutmeg. Remove from heat, set aside, and allow to cool slightly.
In a mixing bowl, add yolks and whisk together. Next, slowly, add the white sauce, about a quarter of a cup at a time, while constantly stirring. Continue adding sauce and stirring until fully blended. Stir in chives and lemon zest.
In a large bowl, add egg whites and juice of half a lemon. Whisk eggs until medium peaks, but not too dry. You still want a creamy looking texture. Next, pour egg whites into white sauce bowl. Gently, fold until just combined.
Divide sauce between 4 mugs, about ¾ full as soufflés, will rise. Sprinkle with gruyere.
On a baking sheet tray, place 4 mugs. Bake for 20 to 22 minutes, until golden brown. Do not open oven during this time.
Make the salad - In the meantime, prepare the salad.
In a large bowl, add arugula. Squeeze lemon juice over arugula. Sprinkle with salt and drizzle with oil. Toss together. Top with bacon.
To assemble - Once soufflés are baked, remove from oven and eat immediately. Serve with salad.

Years ago my aunt gave me a recipe for quiche without a crust - over the years, I have tweaked the recipe & I use it to basically clear out the frig as a little of almost everything goes into mine- Last week I made it in two square pans - the remaining slice went on a bagel w/ homemade Salsa, Cheese, Ham and it was less than $. 80 for my version of Egg, Ham, Cheese on a Bagel and way better than one purchased from a fast food place

It'd have to be after the flour or it's going to stick. Personally I think you should add it to the egg mixture.

@@LeoMidori the Parmesan will not stick because the ramekins have been buttered. Trust me, my father was an executive chef and culinary instructor before he passed away. I learned a lot from him.

If you're making a cheese souffle, and if you have parmesan, try sprinkling the mugs with finely grated parmesan instead of flour (thank you Alton Brown)

Shakshuka is great, but I'm not a fan of chunks of onion and pepper in it, so I like to puree the sofrito before adding it to the tomatoes and then drop the eggs in. Sooo good!

I'm really grateful to this guy. Being a single mom on a strick budget suucks but these videos really help. It would be awesome if he did a weekly meal plan for dinner though.

You left out Pasta Carbonara. If you make it with bacon and don't use too much parm. cheese, it is cheap! And then there is a potato & egg Spanish tortilla and the Italian Frittata!

The whole thing with the show is it's 3 recipes per episode. He just said he was going to show us 3 recipes revolving around egg. You can write full cookbooks about eggs and what to do with them, please don't expect a short web series to completely cover eggs in a short episode.

Little tip: if you're separating eggs, get three bowls. One for whites, one for yolks, and one for separating. That way if you have one yolk break it wont spoil all the whites! 🥚💜

Watching this made us HUNGRY so we made the egg avo toast for lunch but added a couple of pieces of bacon trim cooked in the microwave (bacon trim IS bacon but much cheaper than sliced bacon) Thanks for the poached egg cooking and draining demo - made a BIG difference. We ate our delicious egg, avo, bacon, toast lunch while watching your whole chicken video. Frankie - thanks sooooo much for your inspirational, educational , entertaining videos. You help demystify cooking and show everyone the joys of eating in.

Frankie, I don't want to make snarky comments about flour versus parmesan because you are so clever to think of these recipes. I'm a rocket scientist about cooking and would eventually tweak every recipe but need the impetus to create fabulous ideas. Bon chance, my friend.

My ex boss was from Israel and taught me how to make shakshuka. He never used green pepper or feta cheese, just onion, garlic, jalapeno peppers and diced fresh tomatoes. It was delicious!

I make Shakshuka for Sunday brunch. The eggs are such a chore to clean off of my old cast iron skillet that I put a layer of parchment on the skillet first, then cook the Shakshuka. Then serve it on the paper. No complaints.

HotCrazyCatLady Me Everything requires energy, including the making of paper towels. Unfortunately, there is no energy-use-free alternative. But washing a towel in a load with a bunch of other towels takes much less energy than collecting material, pulping it, and turning it into paper.

@@anahidkassabian4471 we use paper towels. It is not cost effective for us to wash kitchen cloths as we have to buy special detergents for a child with a skin condition. And we are a large family. ALSO we are on a well system, so the expenditure of water has to be monitored closely. Buying disposable is not always the wrong choice. Sometimes it is the best choice. Really depends on individual circumstances. Water is a vital resource in our area, we do not waste it washing anything we do not have to.

MidgeCline You had me at the skin condition. There’s another KZfaqr who is minimum waste but has coeliac, so she buys some things in plastic of necessity. No doubt the circumstances vary. But for most of us, towels, rags, etc are a cheaper and more ethical choice that we’ve just forgotten about, which is why I mentioned it.

I prefer fried eggs over poached with a runny yolk but otherwise, this was my go-to breakfast for a while. Toasted bread with butter, avocado, and a fried egg! Also good in a toasted tortilla for lunch.

honestly i could live on egg and toast, pan sunny up only difference is rotate between soy sauce, salt and pepper, tomato sauce. 2-3 eggs 2 slice of white or other

i get some cheap pasta or gnocchi and make a bechamel sauce and add salt, pepper, and red chili flakes to it. it's insanely easy and fast and also strangely addicting
