For this Smoked Texas Brisket Burger we grind up a whole brisket for this Texas brisket inspired recipe featuring our Cowboy Coffee Bacon Jam and homemade pickles. Chef Tom fires up the Yoder Smokers Loaded Wichita Offset Smoker to slow smoke these 1/2 lb burgers before finishing them with a high heat sear on the griddle over oak splits INSIDE THE FIRE BOX!

I smoke some burgers on my Pit Boss as the second time I used it. Did much the same, smoked for 30-45min, and then because mine is a dual pellet/gas, finished on the gas side. That said, I’m gonna have to give it a try using the brisket instead of chuck.

I love that medium doneness which you don't normally see unless you grind your own and are sure that meat you grind is good quality to begin with. Love your recipes. Only time IMHO you overcook a steak is IF… you can actually make homemade 7 beef and bean chili. Porterhouse, T-Bone, Cowboy, Tomahawk, Brisket, Navel, and Short Plate with kidney, black, white, pinto, navy, Lima, and Northern beans. Added habanero, chili powder, Montreal steak seasoning, tomato paste, red chili flakes, smokehouse maple seasoning, barbecue seasoning, bell peppers, garlic, and onion.

Just made this. This is a 10 across the board. Every aspect. The pickles are great as a snack on their own. The bacon jam is epic. As I was making it, I was highly suspect. But, when done and chopped in the food processor, the jam is great on its own. The chipotle, garlic brisket burger is worth the effort. Thanks much for sharing and creating a video demonstration. we would always take those fatty bits and heavily sinew-ed bits after the brisket was cooked, cut then into about 1/2 inch cubes and throw them in the fryer. Used to make these amazing BBQ kimchi tacos, highly recommend giving it a shot
