Just whisk together about a tsp or tablespoon of lemon juice and olive oil... then slowly incorporate (whisk) about 2/3 cup of oil until you get a sort of mayonnaise consistency... then add your desired level of paprika salt and pepper... That's how I'd do it anyway.

Looks like plate or maybe loin primal, but not rib with that parallel grain and no fat. If you cut just an eye section of rib you'll get a slightly uneven and circular grain.

That is not what we would call a rib eye in America. Maybe a nice looking London Broil. The size and lack of fat marbling the meat is a clear indicator that it is not a rib eye though. A rib eye is not cut like that and if it was part of the rib eye area that would be from a cow the size of an elephant. Like the videos, just pointing out an inaccuracy. Plus, that cut of steak is not being done any favors by cooking on such a hot fire. Indirect heat would work better for something like that.

i agree with him, its definitely not rib eye. the piece would be too small cut perfectly square like that.. plus theres no fat. makes more sense to be top round. too large to any other cut of steak.

That is totally my ideal steak sammich. Notice how that meat tightened up during cooking in oil. A very lean cut, unlike the "prime", fatty meat desired in North America. It's gotta have some beefy-ness and some chew for a proper sammich. Very well done Chef.
