I rarely put my 2 cents in; however, being from the deep South and a chef, and seeing the way he cooked the mac & cheese, I had to step in. Seasoning the noodles is important, and that amount of salt didn't ADD anything to the dish. Neither did the other seasoning. There are many ways to make mac/cheese, but the easiest is making a bechamel, like Robmar40 suggested, then adding your par-cooked noodles. STIR until coated, then add cheese and stir again. Add cream or milk and stir and cook slowly. This allows the starch from the noodles to thicken the dish. NO NEED TO RINSE PASTA, EVER. And I mean EVER. No matter the dish. Kudos to you for having a wonderful pet who you saved.
