The Rasamalai has been grossly misrepresented. And the reactions to Rosogolla confirms why Micah and Alexis are bringing the roof down. Both Rasamalai and Rosogolla are made from cottage cheese. Cottage Cheese is prepared by adding lemon on heated milk. As a result, the milk 'breaks' - fat of the milk (the white solid) separates from the water (that makes milk liquid). The white solid (known in Bengali as chhana and in Hindi as chhena) is then sieved out and finely mashed while sugar is added to it. But an unaccustomed tongue may not like that texture of the chhana. And, those tinned Rosogollas do not come in the first 25% as far as quality and taste are concerned. It is a matter of getting used to - Bengalis will swear by the Rosogolla, trust me. Alexis and Micah need to be in Calcutta (or even better in some semi-urban area around Calcutta) to taste the real Rosogolla.

I've been with the same girl for almost 11 years, she's from LA and she can handle way spicier stuff than I can, we LOVE Indian food.. But one thing is, she barfs at even thought of having a Rasagula ever again (she had it only once and that was more than enough she says!) On the other hand, she loves Gulab Jamun. She hates hates hates the texture of Rasagula because its like eating sweetened sponge, it has a weird elastic-sponginess. So I can totally understand these guys barfing at Rasagula, it's so hilarious! Funny - they love Paneer Tikka Masala (Paneer with orange gravy) - paneer is so close to material in Rasagula. Both made from milk and made in a similar way. I love Rasagula!

Guys I'm from Kolkata and I'm suggesting don't ever try preserved Rosagulla which usually comes in sealed cans. They usually have preservatives and the taste differs a lot from the normal ones. The one that you guys ate might have rotten. If you ever visit Kolkata, then prefer having Rosagulla directly from some of our renowned Mishti (confectionery/sweet) shops. I bet you guys will like it and not regret! It may also become one of your favorite desserts as well! Rosagullas are that good! :)

Btw since you asked, pickled veggies ie, mango, carrots, lemons etc... are supposed to be smeared on the roti, chapati, naan and then dipped in whatever sauce you want. Just enhances the flavour...you're not supposed to take spoon fulls on it's own. Very similar to how small amounts of Vegemite is supposed to be smeared on toast.
