I work in a cafeteria and as soon as I became head cook I scrapped our horrible sloppy joe recipe that was more like candied hamburger swimming in grease and replaced it with this recipe. Customers can't get enough of it, if anyone asks for the recipe I give all the credit to ATK.

We had sloppy joes as a simple meal with tater tots, growing up. My mother buttered and toasted the buns, and we had them open faced. So good. I made them recently, and they're still good! Good childhood memories.

I love watching these segments when you break down the science of cooking. My Sloppy Joe's aren't sloppy either. Love the idea of the baking soda and the corn starch slurry at the end.

I grew up eating Sloppy Joe's and still love them, and will be trying this recipe for sure. One thing I've done since having kids, that you may want to try, is I serve them with hot dog buns. They taste the same as hamburger buns, but the meat doesn't fall all over the place.

Baking soda is also the secret of carmalized onions. Add just a bit and a one hour cooking turns into 15 minutes Carmelized onions. Don't forget the salt & pepper!

@@PastorJack1957 How can you not like curry, there are a million different kinds from many different countries and cuisines. Butter chicken for instance, an Indian curry or massaman curry from Thailand, sweet Japanese curries and many, many others.

We use Bennett's Chili Sauce instead of ketchup. And maybe a little yellow mustard 1/2tsp.

You can also use the soda dry on meant to enhance & ensure a good searing.

When I was a kid we often had sloppy joes because at that time, my wonderfully talented mother was still adding recipes to her collection and her kids would only buy-in on the staples. Two out of three of my mother's sons would put the potato chips *on* the sloppy joe sandwich and they were always crinkle cut style to hold up to the moisture. 😉 40 years and more later we all love to cook but I was the only one who chose to do it professionally.

I believe there are more people eating sloppy joes then anyone realizes. I have them made from scratch, no sugar at all. They're so good. I always add a little green bell pepper, but everyone should make theirs the way they like them. 💕💕💕

A lot of recipes have carrot and other veggies in it is because that is the only way to get some kids to eat their veggies.. plus they add their own flavor.

I love sloppy Joe’s! Thank You for the recipe. It’s close to my recipe except I use a Roma tomato in place of the paste. I use the pickles and a slice of Kraft American cheese, sometimes thin slices of sweet onions. Vidalia onion when in season. Yum.

Best ever Sloppy Joes are very simple -- 1 lb ground meat well browned and drained then equal parts (best guess at equal parts) mustard, ketsup, and BBQ sauce. A little more or less of any of the three depending on you taste. A little salt and pepper on the meat while it is cooking of course.

Nostalgia goggles can be deceiving, tho. Honestly this does have the similar taste- it's the same basic thing. The quality, spice, and texture is just a bit elevated. If you want that classic feel, basically do what they did, except put in a little bit more ketchup n sugar, and cut the red pepper out. I did that for my grandma, and she said it was both the best sloppy joe she ever had, and reminded her of her childhood. :P

I love using a Brioche bun toasted or even a big fat Portuguese bun (my favourite) with a hint of shredded herb Havarti on the bottom. I'm definitely giving this a go but those couple items are a staple in my household with my very own not so sloppy joes.

.5 C ketchup .5 C chili sauce 1 small onion chopped plus 1 Tablespoon Worcester. 1 lb ground beef. Best an easiest sloppy joes ever. Been making these for 40 years. Never tasted better.

I much prefer ground bison, but doesn’t the lamb overwhelm the sauce? I can see making a sloppy Joe with lamb, but I don’t think I’d add tomato - just lots of onion and mushrooms and a thickened stock.

I was going to Culinary school in the early 1990's. I made homemade sloppy Joe's. My housemate brought over her good friend. They both said you don't use the sauce from the can? N!O! It is not that difficult. I used ground turkey, because it was cheaper, back then. No clue...

My grandmother made the best sloppy Joe! There was so much flavor, it did not taste like any other sloppy Joe I had ever tasted. It was tangy with a hint of sweetness! Thank goodness my mom knows how to cook her mother's sloppy Joe. Also, we always ate it open faced with mashed potatoes. Yum!

My aunt taught me to make SJs exactly this way, but usually I leave out the ketchup, maybe up the chili flakes a little, add a little vinegar at the end, as they did. Then -- following my mother's lead, I lightly toast a large soft bun and serve with raw Bermuda onion, thinly sliced, a slice of beefstake tomato from my garden, and leaves of a crunchy lettuce (like Gem.) My younger brother and my kids like them without those veg garnishes but with pickles. One of my sons, who is a chili afficianado, puts on a squirt of SriRacha sauce.😋

I realized long ago that when eating Sloppy Joe's or even a pulled pork bbq sandwich is to eat them on hot dog buns.....less mess plus hot dog buns are tastier in my opinion.

Also if you slice a kaiser bun partially, making somewhat of a pocket, you're good 2 go!! I've also tried using the croissant rolls out the can, making Joes-inna-Blanket/Pocket Joes!!😋😉

I always use a potato masher or my shopping store when I'm using ground beef. The potato masher is what I prefer. :-) I am going to try the baking soda trick. It seems to benefit most things in the kitchen and I only baked with it.

My father grew up during the Great Depression, if my mother ever served meatloaf, hotdogs or sloppy Joe’s there would be hell to pay. I have never had a sloppy Joe in my 60 years of life, might have to try this some day…

Based on the video, since I don't have a Cooks Illustrated subscription: America’s Test Kitchen Sloppy Joes Serves 4 Ingredients: • 1 tbsp water • 1/2 tsp baking soda • 1 lb ground beef, 85% lean • 1/2 tsp table salt • 2 tsp oil • 1/2 onion, finely chopped • 1/8 tsp baking soda • 2 cloves garlic, minced • 2 tsp paprika • 1/4 tsp red pepper flakes • 1/8 tsp salt • 2 tsp brown sugar • 1/4 cup tomato paste • 1/3 cup ketchup • 1 tbsp Worcestershire sauce • 1 tbsp red wine vinegar • 1/2 tsp cornstarch • 1 tbsp water • Buns and pickles, for serving Method: 1. Make a slurry of the water and 1/2 tsp baking soda. Pour over the ground beef, along with the salt. Stir, then set aside. 2. In a nonstick pan, add the oil over medium heat until it shimmers. Add the onions and 1/8 tsp baking soda. Sauté for 3-4 minutes until the onions break down. 3. Add the garlic for 30 seconds, until fragrant. 4. Add the paprika for 30 seconds, until fragrant. 5. Add the red pepper flakes, salt, brown sugar, and tomato paste, cook 3-4 minutes, until the tomato paste becomes rust-colored. 6. Add the beef to the pan. Break it down with a wooden spoon. Cook until no longer pink, about 5 minutes. 7. Mash the beef with a potato masher. 8. Add the ketchup, Worcestershire sauce, and red wine vinegar. Cook for a few minutes. 9. Make a slurry of the cornstarch and water. Stir into the beef until it coats and thickens, about 1 minute. 10. Add any other seasonings to taste. 11. Serve over buns, topped with pickles. Smash the buns to ensure the sloppy joe sticks.

I've always liked pickles and sometimes sliced raw onions on my sloppy Joes. Gonna have to give this a try.

Hey, your "Tidy" Joe recipe was certainly a hit with my sister-inlaw and 2 brothers-in-law. The taste was grown up compared to the old "Manwich" outa the can! I want to see more episodes with your recipes and your humor! Love ya!

One of the many things I love about PBS cooking shows are the variety of recipes. Something simple like sloppy joes, or something rather complex, like a Julia Child French meal. Also, I enjoy ATK with Julia and Bridgette as hosts, the smartest move ATK made after the departure of Kimball.

Gonna try this one. My mom made Sloppy Joe's tonight but she winged it and didn't follow a recipe. Even though they were okay we both felt something was missing. BTW, cole slaw is great as a condiment on a Sloppy Joe. I use a KFC copycat slaw recipe that's delicious.

Once apon a time in key west we got to work at 8 am the boss showed up and became very abusive. Stomped out very angry! Randy, my co worker, looked at me and said sloppy joes is open. The boss found us at the bar around noon. Great sloppy joes! And rum...

When I buy a tenderloin - I ask the butcher to grind the trimmings - including the silver skin. It ends up being roughly .5 - .75lb. The burgers and the sloppy Joe’s I’ve made from this - is next level delicious. It’s extremely tender.

My Mom makes the best sloppy joes, and I do them just like she did when i was growing up: always open face, always w shredded cheddar melted on top and ALWAYS w corn on the side. Any leftover corn and meat are mixed together. I can't have sloppy joes any other way lol 🤤

Love love love Elle but I tried this recipe when I first saw this clip a couple months ago. My family did not think it had the right taste. Forget the paste and use all ketchup.

We had the same reaction to this recipe. This sloppy joe was lacking in sweetness, which is exactly what the ketchup brings.
