Made this tonight, one of the best dishes I've made recently. I'm not a fan of anise and this was my first time using a fresh fennel bulb but I gave it a try. The fennel mellows out and the whole dish was delightful! Thank you Keith, Bridget and ATK!

I made this after the last time ATK posted the video. You’ll want to at least double the recipe. You’ll also want to cover the ears of anyone with a delicate disposition because the special words just fly out when eating this ultra delicious dish.

I could use some fennel in my pantry though. Maybe I can substitute it with star anise and green onions.

I have trouble finding just 1.5 lbs of shoulder, but you can carve off part of one and use the rest for other stuff. I had a bone-in shoulder and used that for extra flavor. The bone weighed 7 oz after roasting so the a bone with meat on it weighing 2 lbs should work for this recipe.

I'm preparing to make this for a crowd. I'm wondering: when you say you doubled the cooking time, do you mean you let the pork stay in the oven twice as long? Thank you in advance!
@smb123211
@smb123211 Жыл бұрын
@@Marcus9638 Secret: As long as the pork is tender and "semi-shreddable" you're OK. Just test it occasionally and when it gets near done, turn the oven off and let it sit 30 minutes to soak up the juices. Do NOT open the oven door. Be careful about too much pork (or not enough liquid) I doubled the meat and nearly ruined the dish once. There are two stars - the pork AND the sauce. Good lucik

@@Marcus9638 Your welcome. Funny episode. My wife and I thought the other had dessert so I found fresh peaches, cut them up with butter, cinnamon, vanilla and nutmeg in a pan, sauteed, added brandy and lit it. Everybody was, "Oh wow." LOL Ice cream in bowls then the warm mix on top. Lots of "did this take all day?" (5 min!)

I’m forever baffled when people describe fennel and anise as tasting like liquorice. To me it’s a very different flavour. It’s like saying chicken tastes like beef. Sure they’re both meat flavours but there’s a world of difference. This recipe looks absolutely spectacular, I cannot wait to make it. Fennel, pork and lemon with pecorino… I’m salivating just thinking about it.

I know what you mean. It depends on what part of the shoulder you use. Not all segments of the shoulder muscle cook to tender at the same rate. The key is to cook to tender, not to time. Let your test fork be your guide. 👍

A good recipe. I found that the lemon was a little too much. I would reduce the lemon juice by half first, taste, and add more if needed next time. The fennel taste was a little too subdued. Next time, I might sauté the fennel for less time, or add some fennel seed, or even add some sambuca before the water (thinking outside the box:) to bring out the anise flavors. Overall, a good recipe.

I made this exactly to the recipe and found it very greasy and too lemony. We threw it away and we almost never waste food. I’ve learned my lesson and now read the reviews on the AtTK website before cooking. (The greasy and too acid comments were there.). Also, I’ll add the recommended lemon or acid in small increments to all their recipes as once it’s in, it can’t be fixed. Very disappointed.

128 fl. oz. of water to cook 12 oz. of pasta? Such a waste! Cold start with enough water covering to cover the noodles, along with some salt, and start the pasta clock as soon as water reaches 180° F (starts to simmer). Come on ATK! Having said that, I am looking forward to making this dish soon.
