I Made My Oma’s Incredible Dutch Donuts For New Years

Nothing beats my Oma’s Oliebollen recipe - they are light, fluffy and perfectly crispy on the outside. They are a really special Dutch donut that we only make on New Year's Eve to celebrate the year ahead. Happy New Year everyone!
Ingredients
- 14g dried yeast
- 125ml warm water
- 60g caster sugar
- 450g flour
- Pinch salt
- 250ml milk
- 2 eggs
- 100g currants
- 100g raisins
- 1 granny smith apple, diced
- Icing sugar for dusting
- Oil for frying (I use canola)
Method
1. Place the yeast into the warm water, stir and set aside.
2. In a large mixing bowl add the sugar, flour, and salt and mix.
3. Create a well in the centre and add the milk, beaten eggs and water yeast mixture.
4. Starting from the centre and working your way out mix the batter.
5. Mix through the currants, raisins and apple.
6. Leave the mixed dough in a bowl big enough for it to double, cover it with plastic wrap and set aside for 1 hour.
7. In a large pot 2/3 full with oil, heat until it reaches 160c.
8. Using 2 spoons, place in golf ball size pieces of the dough in batches of 5-6 and cook until golden brown - around 5-6 minutes.
9. Remove from the oil and leave on a wire rack to drain.
10. Dust HEAVY with icing sugar and enjoy!

Yess! Oliebollen! My mom used to make oliebollen for the whole neighbourhood. After the oliebollen she made appelflappen. And then it was time for deep cleaning the kitchen 😆. Happy New Year from Utrecht (Netherlands).

Heey Andy, another dutchy here. My oma uses half water, half beer. That gives a much richer taste. You can vary which beer you are adding for different flavours. Dark beer makes is sweeter by example. Also cinnamon gives a bit extra

Jep! A nice winterbeer (or herfstbok😂) will do the trick. Tip: first soak the raisins and curants for a while, dry them with a towel and dip them in flour before adding in the batter. They will spread more even trough the batter. Also, add some lemon zest in the batter.

As an oliebollen maker myself, i have a few tips or nice little additions. We use a bit of cinnamon and rum to give them a nice flavour, we do leave out the apple but i can imagine it gives a nice fresh taste. And the oil should be a bit hotter, we bake them at 180C to make them nice and brown and solid in the center. But for the rest, it makes me happy to see that these dutch delights have found their way across the globes. Thank you for this nice receipt and happy new year and the best wishes!

This was a word I had not heard in many, many years. Although my mother (Born in the Netherlands) has since passed, she used to make this as a treat for us kids. I'll definitely make this to honor her memory.

I'm Zimbabwean and my mum used to make these for us a lot. Even when we travelled to our village for traditional occasions she always made these to feed a village for breakfast. She covered them in white sugar instead of powdered sugar. Memories❤️☺️

Best thing about oliebollen is leftovers. On the first of january i slice stale oliebollen 1cm thick, drench them in a egg, milk, cinnamon and sugar whisked together and bake them in butter in a frying pan, sort of french toast. Soak it in maple syrup or sprinkle with powdered sugar. Beste wensen en een spetterend 2023!!!

The Dutch heritage people in South Africa called Afrikaaners are hands down the best bakers in my country. They make this beautiful sweet called koeksusters... you should try it.

Thank you for this! I had these at a Y2K NYE party, so 22 years ago today. The host was of Dutch heritage. My mind was BLOWN at how delicious this dessert is. I’ve never forgotten. Now I might be able to make it myself. 😍

It's cool to hear this, but basically this is not a dessert. These are eaten during the evening of New Years Eve. And many like myself breakfast with the leftovers....for the next two or three days. A short stint in the microwave or oven and they taste like new......I made them myself for the first time this year. My mom used to make them for the whole family, but this year she couldn't. I made them for her, my father-in-law and our self. I made around 80...half with raisins, half without.

@@patvanschaik4271 you could, not the best imo tho. If you want to try, I would make the batter without anything added. Then you can split it up before it rises, and make different versions. If we make these at home, we normally make 3 or 4 different combinations so everyone has what they like!

Dutchy here. Loving this! Tip: soak the krenten and rozijnen in water or booze before adding to the dough. Makes them even more tasty. Bake 4 min per oliebol is perfect.

Agree, leave them sit in the oil until they turnover by themselves. That's mostly at the 2 minute mark.

Great content mate! I’m a Dutchy living in England (nearly 10 years now) and those are the things I miss, same goes for fresh stroopwafels, kroketten etc. Personally, I’d have my oliebollen without anything in it just icing sugar, but I know a lot of dutchys like it with raisins. they look lovely! my mother made tons of them (as well as some appelflappen/apple beignets) on new year's eve! we use melted butter and lemon zest in the dough as well! for the frying part we actually use an ice cream scoop for the an evenly and perfect size (those scoops that you can squeeze)! The trick is to make huge amounts of them so that you can enjoy them the entire week after new years still 😉😋

My dad is dutch, so my mom would make these every year. She actually made a batch last night, but I did not get to partake because I live in a different state. We would refer to them as "oily-boilies" growing up. Thanks Chef Andy (good name by the way). I really enjoy your channel.

A true Dutch dad would make these himself. Oliebollen and pancakes are the two occasions that my dad, who literally didn't know how to cook potatoes, was suddenly claiming dominion over the kitchen.

My Mom used to make those in the 1960’s. They were called Sputniks after the World’s first Satellite (USSR). No fruit, but she put nutmeg and cinnamon in them and lots of icing sugar. So good.

My maternal grandfather was Dutch. My mother learned to make "fastnachts" (sp?)on Mardi Gras/Fat Tuesday before Lent started. They were a yeast donut and, after frying and draining, were dipped in a glaze. YUM.

An other dutch fan here! Great video as always! In our family we make it sort of a battle to make the most clean oliebollen. That means “geen staarten” (no tails) on the oliebollen. It is really hard to do with that sticky dough! Have a great NYE everyone! Stay save.

This is great Andy, love your channel mate. When I make oliebollen, I alway add a little zest preferably from an orange… You can use an icecream scoop to put them in the oil.

I've never seen them done with apple before, but I can imagine it works really well! Very nicely done and every detail including the incredible amount of icing sugar is so spot on! This dutchie is impressed 😄

Nice one Andy. You could replace the milk and water with beer so you get more air in the oliebol. Just a good lager beer will do.

They're not just doughnuts, they're the predecessor of doughnuts! Also I've never seen oliebollen with apple bits in them. We do usually have apple beignets which is just a slice of apple covered in the same dough, also sometimes banana or pineapple ones

Adding very thinly cut apple bits is very common in more of the "bakkersoliebollen" style. Not the street ones. The ratio apple to dough is usually lower though.

My dutch family always makes "Appel bollen" or "Krenten bollen" so either apple or currants we never do them together in one, the currant ones have more bite and the apple only ones have like a gooey apple center. Love them both but miss me with the plain ones.

My Opa was the one in his house to make these, he hid out in the garage frying so the house would not smell of oil. He did most of the cooking. He added a touch of vanilla to his batter. Great memories. He also made fried apple slices dipped in batter. He always amazed me with his apple peeling abilities... one long strand of peel, unbroken. Your Oliebollen look amazing.

I will tell you, it’s the best! you can also soak the raisins and apples in some beer or liquor. Did that last new years and that was and it were the best I’ve ever made!

So awesome. Batch is resting now. I’m probably being bad but I made it plain (no fruit). Gonna be yum still Update: came out perfect! Morning coffee was killer. Word to the wise, don’t make them too big. I made a few too large ones and they were raw inside.

As a dutch person, I approve of this message. In the Netherlands you can buy oliebollen without fruit so it's not you being bad, they exist. Andy's oliebollen are the first time I ever heard of someone adding apple to the mixture (we usually have a different kind of oliebollen with apple, they're called appelbeignets; they don't contain raisins). Also a small tip: use an ice cream scoop to put the dough into the oil. They'll be perfect sized.

Dutchy here. We always make them 1 day ahead. They are even more delicious then. 🎉 we eat them room temperature. With lots of icing sugar of course.

In western Germany these pastries are called Krapfen and it's tradionally served during the carnival😍
