Aussies are well known for their kangaroos, but did you know they’re also a lean, sustainable meat source too? Join me and I’ll show you how easy it is to cook a kangaroo steak and chips dinner. Stick around too, because I’ll be showing you a delicious extra recipe that not many of you will have tried!

Recipe kangaroo steak
- 200g kangaroo (roo) loin per person
- Salt to taste
- 1 tsp wattleseed to season
- 1 tsp high temp oil like avocado or grapeseed oil
Method
1. Remove the roo from the fridge 1 hour before you are going to cook it.
2. Brush the roo lions with the oil on all sides and season with salt and wattleseeds.
3. Over a very high grill, cook for 2-3 minutes on each side or until you reach an internal temp of 45°c.
4. Rest the steaks for at least 6 minutes before you slice them.
Recipe chips
- 1kg of potatoes (I used dutch creams. King Edward, Maris Piper, Romano, Désirée, or russet potatoes also work great)
- Oil for frying (tallow works great, peanut or canola also work well)
- Salt
Method
1. Wash your potatoes and cut them into 2cm squared chips. Then, put them in a pot with cold water and a tbsp of salt and bring them to a boil. Once boiling, cook it for 4-5 minutes or until the potatoes are just cooked.
2. Remove them from the water and place on a wire rack and into the freezer to dry for 1 hour. Alternatively, you can do this the day before and just leave them in the fridge overnight.
3. Next, heat your oil to 140°C and cook your potatoes for 7-10 minutes or until they just start changing colour. You are best to do this in small batches as you don't want to overcrowd the pot
4. Remove the potatoes from the oil and place them back on the wire rack and in the fridge or freezer to cool again.
5. Heat the oil up to 180°c in batches, place your chips back in for 4-5 minutes or until golden brown.
Ingredients Mushroom sauce
- 200g Swiss Brown mushrooms
- 1 shallot, finely diced
- 3 cloves garlic, finely diced
- 2 tbsp brandy or whiskey (optional)
- 500ml beef stock
- 200ml cream
- Salt and pepper to taste
- Finely chopped parsley
Method
1. In a pan over med-high heat as the butter and oil, once melted add the shallots and garlic.
2. Sauté ****for 2-3 minutes and then add the mushrooms and cook for a further 3-4 minutes.
3. Deglaze the pan with the brandy and when it has evaporated, add the stock and reduce by at least half to 3/4.
4. Finish with cream and parsley just before you serve.

There was once a Butcher here in Ireland in the early 2000's that specialized in hard to find meat like Kangaroo, Alligator and Ostrich so I did have the pleasure of trying Kangaroo. Very nice if you ask me - even though I'm sure I overcooked it at the time.

I marinate my roo in teriyaki then sear it in a hot pan for 2 min on each side, rest for 5-10 min, that give it another 30 secs on each side. Comes out perfect. Best thing I ever made. Honestly, after you've had roo, you'll never want beef again.

Great stuff. I would highly recommend making a website to post your recipes and expand your brand. I hate reading recipes on a KZfaq description cause it's very awkward on a phone. Would recommend this and you'd be doing me and so many people who love your content a huge favor

In 2006 i worked for a cladding company and we stayed the week over in Zandvoort(Netherlands) And there was an Australian cafe/diner called the Boomerang. I had kangaroo steak and i have to admit that i was delicious. After one time eating there, i made this my favorite restaurant. 4 years later i was on a holiday in Zandvoort with my 12 year old daughter. And the first diner we had was Australian food in that same restaurant. And she liked it also, so it was not just me.

When people ask me my favourite cuisine, they are always either very surprised or very affronted that I say I love Aussie Cuisine aka bush tukka. Years ago I visited Fraser Island, now known as K'gari, and the chefs there offered a 'bush tukka' course. I died and went to heaven!!! The wonder and beauty of this food is that it doesn't travel outside of Oz, and personally speaking, I think that is how it should be!!! Simply because it makes me want to keep travelling back, half way across the world, to indulge in the finest foods the planet has to offer! Combine that with Emu, Kangaroo, Crocodile and all your fish that we don't get this side of the Atlantic....it's simply heaven on earth! Please don't ever export your food. Make us foodies come to you to get it! It tastes so much better when we do. Right, change of subject....love your channel, love you Andy and love Katelyn Babe! Mitch and Caleb too! There are more deer in the hilly fringes of Melbourne & Sydney than 'roos! You MIGHT want to CHECK your facts before spouting off nonsense love! PS, there's LOTS of venison farms all over Australia!

Interesting way of doing it my dad always cut super thin steaks and cooked it on a super hot pan very quickly till rare. Almost black on the outside. Loved it.

my daughter lives in Tassie, and she regularly buys wallaby to cook. I was apprehensive about trying it, but I made a few steak sandwiches, and they were delicious. Great video. Looks so yum.

Back when i lived in Australia i had a dish in Adelaide - Skippy in Chilli Plum sauce with a green salad, it was lush. I recommend the meat, very tasty

Oh man...the Kango TarTar looks AMAZING!!!! I have access to Roo meat here inn Canada but it is pretty scarce but my wife and I love it! But yes the tartar is on the future menu! Great video Andy...Thank you Mike 🇨🇦

Years ago my BIL gave us some wallaby patties. As they were quite 'gamie' he added to the mince diced bacon. The bacon added much needed fat and it worked a treat and was delicious.

Place called Aussie outback in Ireland used to serve it(Irish workers came home one of them saw the market for Aussie style food in Ireland made a chain) really nice I'd take it over alot of steaks but got nothing on featherblade

man, had my first experience whit kangaroo today. Gotta say, hella good eats ! Lean yet moist, good barn yard musk on it. Loved it. If to compare to something, Id say horse is close to the same.

That 'roo was PERFECT Andy! When my dad was still here, he cooked it regularly. He & I, became expert @ cooking 'roo steak. I always tell people to cook it LIKE calamari! FLASH cook it or stew it, anything else yields shoe leather!
