Ogni mattina intorno alle otto si accende il ronfo’, antico fuoco a legna dove le minestre (minestrone, zuppa di ceci, pasta e fagioli, farro) cuociono lentamente per almeno tre ore. Ogni mattina dai forni viene portata fuori la legna di ulivo lasciata asciugare tutta la notte. Con 116 anni di tradizione abbiamo stufati, stracotti, coniglio, baccala’, stoccafisso, fritti, farinata, torta di castagne e molte altre fantastiche ricette.
Every morning around eight, the Ronfo' is lit, an ancient wood fire where the soups (minestrone, chickpea soup, pasta and beans, spelled) cook slowly for at least three hours. Every morning the olive wood is taken out of the ovens and left to dry overnight. With 116 years of tradition we have stews, rabbit, cod, stockfish, fried foods, farinata, chestnut cake and many other fantastic recipes.
