¡Encantado de conocerlo! El azúcar solo se remoja por 8 horas y se deja a temperatura ambiente (si la temperatura ambiente es alta, se puede dejar en el refrigerador por 10 horas, porque en el refrigerador el azúcar se disolverá más lentamente).

can anyone suggest: what can be done after soaking the ginger slices for no sugar version? also what other methods can be used to slice ginger thinly if I do not have good knife skills? (have diabetes can't take sugar stuff.) thanks in advance!

Thinly sliced ​​ginger contains less sugar; You should only eat 5 to 10 slices a day in the morning; (absolutely do not eat at night); Make sure you don't have to worry about diabetes. @thuyakipham yes I'm looking for a no sugar version as my whole family have diabetes. basically can't find non candy no sugar version outside at all! we are familiar with ginger and can accept the spiciness.

Maybe you didn't add enough sugar or you didn't stir evenly. Did you wait for the ginger to soak in sugar for at least 8 hours?

raw sugar okay? I tried 3 times, I don't know why it's not crystalising. Not enough sugar?

You can add 100 grams of sugar, and have to wait at least 8 hours (maybe 15 hours in the refrigerator). Ginger needs time to absorb sugar before it can crystallize 🌷Slug over medium heat. When the water is almost gone, you have to slug it evenly until you see crystallization.

I add the least amount of sugar possible to reduce the spicy and bitter taste of ginger. If it's your first time making it, you should add more sugar than me. Once you have experienced slugs, you can follow my recipe. It took many times of making ginger candy to get this recipe. Ginger candy must have sugar to make crispy !
