I had some leftover spinach and herb wraps from my previous video so I decided to make one of my favourite foods: burritos!
Filled with red onion, black beans, guacamole, cashew sour cream and red pepper rice, these burritos went down a treat!
★ RECIPE ★
~ Wraps: store-bought
~ Black beans: straight from a can (rinsed first)
~ Vegan sour cream (I omitted the cilantro): www.simple-veganista.com/2012/...
~ Guacamole: mash avocado with lemon/lime juice, salt and minced garlic.
~ Red pepper rice: prepare a pot of white rice. Roast some red peppers (I left the skins on). Blend roasted red peppers with a small amount of vegetable stock paste and some lemon juice, then mix with the rice.
